Every element on the plate—and I mean every single one—has purpose. Nothing is decoration. Nothing is filler. Each component adds a layer of flavor, a texture, a dimension that builds toward something greater. It’s cuisine with intention so clear, you can taste the thinking behind it. During the warmer months, the team preserves a wide variety of cultivated and foraged ingredients from the garden and the island’s surrounding wild landscapes. Now, Nicolai delves into that larder—summer’s bounty captured through traditional Bornholm techniques passed down from his grandfather.This is personal. This is rooted. This is cuisine with memory. Unripe figs. Last summer’s tomatoes. Mahogany clams aged in Norwegian fjords. Each ingredient preserved at its peak, then transformed through fermentation, smoking, drying, pickling. The layering of flavors is extraordinary—sweet against sour, umami depths, bright acidity cutting through richness. Nicolai’s philosophy: respect the season, honor the island, trust the old ways. celebration of ingredients ✨ Alfreð & Eva starting two new ventures — @ciao_reykjavik and Golf Club Service. Honored to be part of the very first ingredient tryout. This is how good things begin.

This place gave me one of my most memorable one Michelin star experiences I had, but something has changed. Located at central Copenhagen, @restaurantalouette is hidden in plain sight. Chef @nickcurtinalouette menu is all about sustainability and seasonality, giving utmost respect to local producers. The restaurant that was opened originally in 2018 in a shady graffiti covered building, moved to a new location back in 2024. I still reminisce on my first visit here in 2021. The food, the staff the atmosphere. It was and still is one of my most memorable dinners, so I was very excited when I had the chance to come back and thanks to the @the.hungries we had front row seats overlooking the kitchen. But for me something has changed. I mean the food is still creative and delicious. I enjoyed every dish on its own. But has a whole, I felt the menu lacked balance. Almost all dishes were on the sweet side, like a monotonous melody that stops exciting you at a certain point . But it wasn’t only that. In my previous visit, Alouette felt like home. From Chef Nick welcoming us, to the smile and passion of each staff member. It wasn’t long before they all knew about our trip, where did we eat and where are we planning on going next. We felt seen as individuals and not only as another table of diners. That feeling was missing this time. And while I admire food, I know this is only half of the story. A great restaurant is much more than food. It is an experience, a story.

This is an extraordinary restaurant, one that tells the story of @sven_erik_renaa and @frurenaa, the couple who transformed the small city of Stavanger into a destination of genuine gastronomic significance. Here, three Michelin stars are expressed in their purest form, the sort that makes you happily cross borders, rearrange plans and travel purely for the privilege of a meal. There is so much more to say, and we shall in time. But being just over an hour from Copenhagen makes @restaurantrenaa all the more enticing. And then there is the rather lovely @eilertsmithhotel in which it resides, adding another layer of charm to an experience that already feels quite special.
