I remember the moment clear as day. I was in culinary school and our instructor was talking about seasonal eating and I turned to a classmate and asked her, “what does seasonal eating mean?” This was in my early 30s btw. Most people don’t know what eating with the season means, and I was one of them. We live in a world where strawberries show up in December and butternut squash sits on shelves in July. We’ve been so quietly disconnected from the rhythm of the earth that we don’t even notice anymore. Farm to table means knowing that the tomato on your plate spent its life in actual soil, under actual sun, tended by actual hands. It means your food has an origin, a season, a reason. And when you eat that way your body recognizes it. Eating with the seasons means eating food at its most alive—full of flavor, rich in nutrients, and deeply connected to the earth that grew it.
