The Heart & Soul of BANG BANG! Noodle 🥵 our famous chilli oil This version is known in Sichuan & Guizhou as Xiang La Jiang. Xiang in Chinese translates to fragrance, our chilli oil is one where the fragrance of the chilli 🌶️ and aromats is boosted up to 11 without the heat packing a knockout punch 👊🏽🤕 The oil is first simmered with whole spices & vegetable offcut to infuse the first layer of Xiang: aromatic & sweet spice. 🫚 The chillies are then meticulously destemmed and de-seeded before being turned into a paste. This Chicken Skin Chili Crisp is probably the best recipe I have ever created. It just makes sense, right? Crispy Chicken Skin. Rendered Chicken Fat (Schmaltz). Aromats. Spices. Chillies. Crunchy Shallot and Garlic. They are all just made for each other. This takes the standard Chili Crisp to a whole new level. This Chicken Skin Chili Crsip recipe makes loads, but I'm already halfway through the jar, so you'll get through it quickly! Plus, a quick note on the shallots and garlic. I have made Chili Crisp before where I have crisped my own shallots and garlic, and the results are good. But I do find that the crunch isn't always as CRUNCHY as I would want. So, using premade crispy shallots and garlic is the perfect solution to this problem. Making sure every bite is super crunchy right to the end of the jar! creamy coconut, ginger & coriander soup with roasted squash🌿😌 Inspired by mulligatawny soup because I’ve been craving something similar. Do as I say not as I do and make sure you add your spices with the leeks and aromats! Ingredients (serves 4) Roasted butternut: 600g peeled and cubed butternut squash 1 tsp cumin seeds 1 tsp turmeric Olive oil (enough to coat) Soup: 1 heaped tbsp coconut oil 2 Leeks sliced (200g) or 1 onion 30g Ginger, mined 4 Garlic, minced 1 green chilli, minced (or chilli flakes) 1 ½ tbsp Curry powder ½ tsp turmeric 2 bay leaves 1 tin Coconut milk 800ml Chicken/ vegetable stock 100g long grain rice (I use easy cook), rinsed Juice of 1-2 lemons Bunch chopped coriander 1 tsp honey Set oven to 200C. Add butternut to a roasting tray along with spices and olive oil, combine. Roast for about 40 minutes (until nice and golden), giving them a shake half way through cooking. Place a large saucepan on a medium heat. Add the coconut oil followed by the leeks and let them soften for a couple of minutes before adding the ginger, garlic and chilli Stir in the curry powder and turmeric along with some salt When nice and fragrant add the stock, coconut milk and bay leaves. Cover and bring to the boil then reduce to a simmer Add the rice and bring back to the boil. Simmer, covered, until the rice is tender but not fully cooked Stir in the coriander, lemon juice, honey and butternut squash. Remove from the heat so the rice doesn’t over cook Serve straight away with extra coriander, olive oil and black pepper

Bring to the boil and reduce the heat. COOK for 45 - 60 minutes over a gentle heat until chicken thighs are cooked through and flavours have infused into the stock. ADD mirin, tamari, spring onion and coriander just before serving. SERVE in large bowls with or without noodles and enjoy. NOTES + INSPIRATION + For lane kluski (polish for egg noodles) beat 2 eggs and pour in a thin stream over the simmering stock for the best egg noodles you’ll ever eat. + If using dry turmeric, then only use 1/4 teaspoon, but fresh is best for it’s anti-viral properties + Other vegetables can be added if you like such as shiitake mushroom, spinach, kale.

Tom Kha is a soup (vegan), popular from the Thai cuisine. The base is a mix of veggie broth and coconut milk, and contains aromats like lemongrass, galangal and kaffir lime leaves. I love throwing in some enoki mushrooms to the soup, which add a noodle like texture. Just perfect to cosy up on a cold evening. INGREDIENTS • 2 stalks lemongrass (from @jjgtfood ) • 2 Thai red chilies (from @jjgtfood ) • 1 small piece (5 cm) galangal • 8 kaffir lime leaves • 400 ml (2 cups) vegetable stock • 1 ½ tsp salt (or 2 Tbsp fish sauce if not making vegan) • 1 tsp sugar • 200 grams (2 cups) enoki mushrooms • 5 baby onions (from @jjgtfood ) • 400 ml (2 cups) full fat coconut milk • 1-2 tsp lime juice • a handful chopped coriander INSTRUCTIONS 1. Place the lemongrass onto a chopping board and smash it with the back of a heavy knife (this helps to release the flavors). Then cut the lemongrass into 4-5 pieces. Slit the Thai chilies lengthwise. Slice the galangal into thick slices. Tear the kaffir lime leaves from the middle. Peel the baby onions. 2. In a pot, add the vegetable stock and all the aromats that you chopped earlier (except baby onion). Add the salt and sugar. Put the pot on medium heat and bring to a boil. Reduce heat and let the broth simmer for 10 minutes. 3. Add the enoki mushrooms (chop off the core and separate the stalks), baby onions and coconut milk. Bring it to a simmer and let cook for 5-7 minutes. Do not boil rigorously after adding coconut milk, otherwise the fat will accumulate on the surface. 4. Turn off heat. Add lime juice and coriander. Daab Chicken inspired by Tribal Cuisine! Tribal cuisines are generally unknown and if it’s from lesser known cuisines, it’s almost forgotten. In hill tacks of Bangladesh local habitants cook chicken inside bamboo with lots of green chilli and sliced (kata) aromats like shallots, ginger garlic. Also they wildly use Shidol, tribal shrimp paste. This recipe uses young coconut (daab) instead of bamboo as it’s much more available. The unique yet bold flavours of this dish will blow you away.
