IT MELTS IN YOUR MOUTH🫐🍋 i LOVE blueberry lemon but find most lemon loaves sooo dry and boring. my goal: MOIST AF, ALMOST CUSTARDY lemon blueberry yogurt loaf. it took…. forever. BUT i am so happy with how she turned out! go make it and lmk what you think🫶🏼 RECIPE: 120g (½ cup) avocado oil 200g (1 cup) sugar zest of 2 lemons 3 eggs 200g (¾ cup + 1 tbsp) Greek yogurt 2 tsp baking powder 1/2 tsp baking soda 1 tsp salt 220g (1¾ cups) all-purpose flour 180g (1 cup) frozen blueberries (i used wild) for the syrup: juice of 2 lemons 1/4 cup sugar Zest your lemons and rub with the sugar to release oils. Add eggs, yogurt and vanilla. Whisk. In a separate bowl, combine dry ingredients. Whisk dry into wet till just combined. Stream in neutral oil (I used avocado). Coat your frozen blueberries in flour. Fold in gently. Bake in an 8.5x4.4 loaf pan at 350F for 50-60 minutes (tent with foil if the top gets too dark!). While baking bring sugar and lemon juice to a boil and reduce till syrup.
