CREAMY CHICKEN-CURRY BUNS #food #recipe #chickencurry #buns #ramadan DOUGH 200 ml lukewarm milk 7 g instant yeast (1 packet or 1 tablespoon) 12 g honey 1 egg (m) 35 ml sunflower oil 400 g all-purpose flour 8 g salt (1⅓ tsp) 12 pieces CHICKEN MIXTURE 400 g chicken thighs, diced 5 g salt (⅚ tsp) 3 g onion powder (1 tsp) 2 g garlic powder (⅔ tsp) 2 g cumin powder (⅔ tsp) 3 g curry powder 2 g cayenne pepper (⅔ tsp) 120 g yellow onion (1 onion) 75 g red bell pepper 75 g green bell pepper 50 g corn 75 g crème fraîche 100 g grated cheese COATING 75 g Parmesan cheese 2 g curry powder 2 g onion powder Place the lukewarm milk, yeast, and honey in a deep bowl. Mix well and let rest for 5 minutes. Add the beaten egg and sunflower oil and mix well. Add the flour and salt. Knead for 10–12 minutes until smooth. Cover and let rise for 1 hour, or until doubled in size. Heat a frying pan over medium-high heat and cook the chicken thighs with the salt, onion powder, garlic powder, cumin powder, curry powder, and cayenne pepper for 2–3 minutes. Add the yellow onion, red bell pepper, green bell pepper, and corn and cook for another 4–5 minutes. Add the crème fraîche and mix well. Add the grated cheese and stir until combined. Let the chicken mixture cool completely. Mix the finely grated Parmesan cheese with the curry powder and onion powder in a bowl and set aside. Deflate the dough and divide it into 12 pieces of about 60 g each. Shape into balls. Roll out a ball into a round sheet. Place a slice of cheese in the center, followed by the chicken mixture and another slice of cheese. Seal the dough and shape into a ball. Brush the ball with milk and roll it in the cheese mixture. Place the balls on a baking tray lined with parchment paper and let rise for 30 minutes, or until doubled in size. Bake the rolls in a preheated oven at 200°C (392°F) for 12–18 minutes, or until golden brown.

Chocolate espresso buns ☕️ Recipe below: ⁣ ⁣ Ingredients⁣ ⁣ Dough:⁣ 350g bread flour⁣ 45g sugar⁣ 15g milk powder⁣ 7g instant dry yeast⁣ 5g salt⁣ 200g whole milk⁣ 1 large egg⁣ 60g unsalted butter, softened and cubed⁣ ⁣ Chocolate espresso filling:⁣ 70g unsalted butter⁣ 80g dark Chocolate⁣ 65g powdered sugar⁣ 18g dark cocoa powder⁣ 1 tsp instant espresso powder⁣ Pinch of salt⁣ ⁣ Brown sugar espresso glaze:⁣ 50g brown sugar ⁣ 50g water⁣ ½ tsp instant espresso powder⁣ ⁣ Instructions⁣ ⁣ Dough:⁣ •Add all ingredients except butter to the bowl of a stand mixer fitted with a dough hook. ⁣⁣ •Knead on low-medium for 10 minutes. ⁣⁣ •Add butter in cubes, one cube at a time. ⁣⁣ •Knead for another 10-20 minutes until the dough passes the window-pane test. ⁣⁣ •Place dough in a clean, lightly oiled bowl. ⁣⁣ ⁣ Room temp -and cold-proof:⁣⁣ •Proof at room temp for about 1 hour, or until the dough has risen to 60-70%. ⁣⁣ •Transfer the dough to the fridge and cold-proof until fully doubled in size. For me, this took 30 minutes, but keep an eye on your dough because the timing will vary depending on the initial temp of your dough and fridge temp. ⁣⁣ ⁣ Meanwhile, make the filling:⁣ •Melt butter on low heat. ⁣ •Add chocolate and stir until melted. Add the rest of the ingredients and stir until combined and smooth.⁣ •Transfer to a bowl and place in the fridge for 30 minutes, stirring every 5 minutes until the filling is thick and spreadable. ⁣⁣ ⁣ Shape and bake:⁣ •Remove dough from the fridge and transfer to a lightly floured work surface. ⁣ •Roll the dough into a 40x30cm rectangle. ⁣ •Evenly spread out the chocolate filling. ⁣ •Grab one of the longer sides of the dough and fold it in half. ⁣ •Divide into 9. ⁣ •Divide each strand into 4 and braid as demonstrated in this video. ⁣ •Arrange in large muffin liners. ⁣ •Proof for 30 minutes. ⁣ •Bake at 180C/350F for 12-15 minutes until golden. ⁣ ⁣ Make the glaze:⁣ Add water and sugar to a pot. Simmer for 2-3 minutes to dissolve the sugar. Remove from heat, add espresso powder, and stir until fully combined. ⁣ ⁣ When the buns have finished baking, immediately brush over the syrup and enjoy 🫶
