The meat comes out tender, juicy, and flavorful without being too salty or mushy! It’s the perfect Saint Patrick’s Day dinner or honestly, a great way to switch things up any night of the week! INGREDIENTS ▫️Corn Beef with included spice packet ▫️1 large head of green cabbage ▫️1 onion quartered ▫️3-4 carrots cut in 3 inch segments ▫️3 stalks of celery chopped ▫️12 small red potatoes quartered ▫️3 garlic cloves ▫️2-3 bay leaves ▫️12-15 whole black peppercorns ▫️8-10 juniper berries (optional, we left out) ▫️1/2 tsp all spice or 10 whole all spice berries METHOD 👩‍🍳 soak corn beef in an ice bath for 1.5 hours, then pat dry on all sides. This step helps reduce the salt level of your packaged corn beef. 👩‍🍳place corn beef, spices (including the provided spice packet), garlic, onion, carrots & celery in a Dutch oven. Add 8-10 cups of water and cover on medium heat until you reach a very gentle boil. 👩‍🍳reduce heat to low and let simmer for 1.5 hours. Check occasionally to ensure it is not boiling and skim any grey foam that make occur (this is just coagulated proteins that occur naturally when boiling meat, making stocks, or soups) 👩‍🍳Add cabbage, potatoes and additional carrots and cover on low for an additional 1.5 hours. OR roast your potatoes and carrots in your oven at 400F for 40 minutes for some additional texture to your dish! Up to you. 👩‍🍳serve when meat is tender and starts to shred easily.
