“Nihari is actually one of the easiest things you can make,” says Chef Rafia Mazhar. Ready to test this bold claim? Check out her recipe for a nihari that takes only an hour to make. Beef Nihari (serves 3 to 4) Ingredients: 2 large onions 3/4 cup oil 4 to 5 cloves garlic 2 inch piece ginger 300 g boneless beef shanks (bong meat) 1 large beef bone with marrow (nalli) 1 tbsp Kashmiri red chilli powder 1/2 packet Shan Nihari Masala (adjust as per your taste) 3 tbsp all-purpose flour 2 tbsp wholewheat flour (atta) For serving: Ginger julienne Chopped green chillies Chopped coriander & mint Lemon wedges Instructions: Thinly slice the onions and fry them in the oil till golden brown. Remove on a paper towel. In a mixer add half the browned onions, fresh garlic and ginger and some water. Blend to form a paste. In a pressure cooker, add the meat, onion paste, red chilli powder, Shan Nihari Masala and 2 glasses of water. Cook on high flame for 30 minutes till the meat has tenderised. Meanwhile, roast the flour and atta till browned and fragrant. Then mix with some water to form a paste. Once the meat has cooked, transfer to a large pot and skim out the oil from the top. Also remove the beef bone (nalli). Add some water if you feel the gravy is not enough. Strain over the flour paste and mix well. Cook on medium low flame for 5 to 10 minutes till the gravy has thickened. Season the Nihari with more salt or Shan Nihari Masala if required. Transfer the Nihari to a serving dish and pour the skimmed oil on top. Also empty the nalli. Serve hot with naan & the garnishes. Nihari - “Ek plate Nihari, aur duniya bhool jaari!” 🙂↔️😊 ——————————- Here’s a simple and delicious Nihari recipe using readymade Nihari masala (like Shan, National, or MDH): ⸻ 🌶️ Nihari with Readymade Masala 📝 Ingredients: • Meat (shank or boneless): 1 kg • Onion (sliced): 1 large • Ginger garlic paste: 2 tbsp • Readymade Nihari Masala: 1 packet (adjust to taste) • Wheat flour (atta): 2 tbsp (for thickening) • Water: 5–6 cups (adjust as needed) • Oil or ghee: 1/2 cup • Optional: Bone marrow (nalli) pieces for added flavor 🌿 For Garnish: • Ginger (julienned) • Green chilies (sliced) • Fresh coriander (chopped) • Lemon wedges ⸻ 🍳 Instructions: 1. Sauté the onions Heat oil or ghee in a large pot. Fry the sliced onions until golden brown. Remove a small portion for garnish (optional). 2. Cook beef Add ginger garlic paste and sauté for 1 minute. Add the beef and cook until it changes color. 3. Add 1 tbsp Kashmiri lal Mirch powder, 1/2 tbsp regular lal mirch powder, 1.1/2 tbsp dhaniya powder , Salt as per taste , nihari masala Add the entire packet of readymade Nihari masala. Stir well for a couple of minutes. 4. Add water Pour in about 5–6 cups of water. If using bone marrow (nalli), add now. Cover and cook on low heat for 2–3 hours until meat is tender. (Alternatively, pressure cook for 25–30 minutes if short on time.) 5. Thicken the gravy Mix 2 tbsp atta (wheat flour) with 1 tbsp besan roast them add 1 tbsp nihari masala with 1/2 cup water to form a smooth slurry. Add to the nihari and cook for another 15–20 minutes on low, stirring occasionally, until the gravy thickens to your liking. 6. Final touch Add a splash of ghee or butter on top before serving (optional but flavorful). ⸻ 🍽️ Serve Hot With: • Naan or kulcha • Lemon wedges • Sliced ginger, green chilies, and coriander ⸻
