Ingredients: 2 Walden grass fed beef shanks Salt and pepper Olive oil 1 medium onion, diced 2 carrots, diced 2 celery stalks, diced 1/4 cup parsley stems 1.5 cups Walden chicken bone broth 1/4 cup soy sauce 2 tbsp black vinegar 2-3 strips lemon rind Season shanks with salt and pepper (and spice blend if you have it). Sear in Dutch oven until deeply browned on both sides. Remove and set aside. Add carrot/onion/celery/parsley and cook until softened. Add broth, soy, vinegar and lemon and bring to simmer. Add back shanks with accumulated juices. Cover and braise on low until meat falls apart, 2-3 hours. While shanks are braising, make gremolata. Combine 1 minced clove of garlic, zest of 1 lemon and a handful of well-chopped parsley Pick meat from shank bones and combine with sauce from Dutch oven. Osso buco, in Italian, translates to bone with a hole. Traditionally it is made with veal shanks, but it’s common to see pork, or like this recipe, beef shanks. As the meat simmers down, it breaks down and becomes tender and the marrow in the center of the bone adds richness to the sauce This osso buco recipe produces a tender beef shank cooked over low heat with red wine and a few other ingredients. An easy recipe that takes only 20 minutes to prepare and about 3 hours to complete. This is my own recipe that is much simple and easy and so delicious. Why are people so seemingly defensive about what constitutes “authentic” Italian food? Do Italians never add any variation to a set list of “authentic” dishes? I want to immediately warn you that I do not pretend to be an authentic Italian recipe. Ingredients: •Beef shanks 800 g •Olive oil 30 g •Butter 40 g •Garlic 3 cloves •Shallots 4-5 pcs •Leek 1 root •Carrot 150 g •Parsnip(chirivia) 80 g •Turnip 100 g •Thyme sprigs 3-4 pieces •Bay leaf 3 pcs •Salt and pepper to taste •Cognac 30 g •Red dry wine 1 bottle 1. Brown the wagyu beef shanks in oil. Set them aside. 2. ⁠Make the braising liquid sautéing celery, carrots, onions, parsnip (chirivía) and turnip. 3. ⁠Return the meat back to the pan. 4. Add bay leaf, thyme and cognac. Set it on fire. 5. ⁠Add wine. Cook for about 2 hours. Test for doneness by poking the meat with a fork. The meat should be falling apart and tender. (You can add beef broth if desired) 6. ⁠Serve shanks over creamy polenta, mashed potatoes or egg noodles topped with the sauce from the pan and fresh parsley. Enjoy!

Sear for 2-3 minutes on each side. 5. Remove from the pot. 6. Add some police oil, then add the veggies. 7. Add a pinch of salt and pepper. 8. Cook for 2-3 minutes. 9. Add the garlic halves and the tomato paste. Cook down for 2 more minutes. 10. Add the shanks back to the pot, then the beef stock and wine. 11. Add the bay leaves,herbs, star anise, and cinnamon. 12. Bring the pot to a simmer, and place the top on. 13. Place in the oven. 14. Cook for 3-4 hours, or until the meat falls off the bone. 15. To make the sweet potato mash, add the sweet potatoes to a pot with water, and bring to a boil. Boil for 20 minutes, or until the potatoes are fork tender. 16. Drain the potatoes, and make the cream mixture. 17. Heat all of the cream ingredients over low heat for 20 minutes. Strain the cream. 18. Put the potatoes through a potato ricer, and then add the cream and fold. 19. Once the beef shank is done, take out of the liquid and let rest for a few minutes. 20. You can lightly dust the beef pieces with flour and black pepper before searing. Remove and set aside. Step 2 then in the same pan add onions and cook for 5-7 minutes until soft and translucent. Step 3 Add the carrots, celery, and garlic and cook another 3-4 minutes until softened. Add the wine and boil until reduced by half. Step 4 Add in the tomato paste, seasoning and beef broth. Follow the same directions, bring it to a boil and simmer for up to 2 hours or until tender.
