I eat rice or grains in most of my meals so it’s nice to switch things up. Tastes so good with the turkey mix! The mix is something I throw together and can be eaten in a burrito, salad bowl, this, etc. Easy, healthy, and versatile! Only thing I would change about this is adding Greek yogurt instead of cottage cheese at the end! Best bell pepper color?? (Anything but green imo) Turkey Mix 1 lb ground turkey 1 can corn, drained 1 can black beans, drained & rinsed 1 can diced tomatoes, drained Taco seasoning 1 red onion, diced 1 jalapeño, chopped 1. Slice bell peppers in half from top to bottom. Drizzle oil over them and bake at 400F for 20 mins to soften them. Option to blanch them instead. 2. Make the turkey mix and stuff each pepper half with the mix. Sprinkle cheese on top and bake for another 20 minutes. 3.
