BERGAMOT-FLAVORED SALT No waste, facile e profumatissimo sale al bergamotto. Una volto spremuto, tolgo la polpa, il più possibile della parte bianca e frullo con il sale. 40g di buccia, 80g di sale. Ottenuta una sabbia bagnata, si essicca in forno a 80C per 2 ore (meglio ancora in essiccatore a 35 gradi per una notte). Si frulla di nuovo fino a consistenza desiderata! Second year in a row making our family’s own Earl Grey ☕️ Earl Grey is simply black tea scented with bergamot. But nowadays, most versions you find in shops are flavoured with artificial aroma… Here in Türkiye bergamots actually grow 💛 and that feels like such a gift. There are two varieties in a fantastic local garden @portakalbahcem in Finike, Antalya. Both are beautiful but the round ones are much easier to work with ☺️ All you need to do: – peel off the zest – carefully remove the white pith – slice it thin – let it dry indoors on a baking paper (mine took 3 days, I was mixing it a few times a day) No special equipment. No artificial flavor. Just real citrus oils slowly drying in your home. You can store the dried bergamot separately or mix it directly with your favorite black tea for the most beautiful morning cup. It might be grey and wet but at least it’s also citrus season! One of my fav varieties is bergamot, it’s sour, bitter and incredibly floral. In this recipe I used it to make a modern take on the lemon meringue pie. Made with a thick bergamot cream it’s also got a hidden layer of milk chocolate ganache and is topped with shards of crisp meringue flavoured with tonka. If you want it to be a bit more broad in its appeal you could also use lime and vanilla powder as the flavourings too. Welcome back to Rollover Leftovers! A super simple tip today. If you have citrus fruit that needs using, just slice and freeze. You can then add it to drinks as well as / instead of ice. It won’t water your drink down and saves on waste. If I’ve used half a lemon or lime and know the other half won’t get used soon, I cut it into slices or wedges and add it into this bag that I keep in the freezer. The slice in the drink is actually bergamot. It’s a very expensive fruit and I wanted to get the most use out of it, so I froze it. Every time I make a G&T, I add a slice.
