Ever wonder why cheesemakers scrape the mold off blue cheese? 🧀 It might seem strange—after all, isn’t blue cheese supposed to be moldy? The key is which mold. Blue cheese is made with specific, carefully introduced cultures that create those signature blue veins inside the cheese. But as the cheese ages, natural molds can also grow on the outside rind. Cheesemakers gently scrape this outer layer to remove unwanted surface mold, keeping the flavor balanced and ensuring only the right molds influence the final taste. Think of it as editing, not erasing—refining the cheese so every bite is rich, complex, and just the way it’s meant to be. #kingstoncreamery #bluecheese #simplysustainable #artisancheese

A cheesemaker in northern Italy left his curds out overnight. He ran off to see his girlfriend. Big mistake. Or so he thought. When he came back - the batch had gone blue. He panicked. Poured fresh milk over it to hide the evidence. Weeks later - blue mold. Strange smell. Unreal taste. He’d accidentally invented Gorgonzola. First recorded in 879 AD. Still made in the same region. Same process. 1,100 years later. Here’s what most people never know. Those blue-green veins are a living mold - Penicillium roqueforti. The same genus Alexander Fleming used to discover penicillin in 1928. During aging, cheesemakers pierce each wheel with long metal needles. Every hole lets oxygen inside. Oxygen feeds the mold. The mold grows through the channels creating the veins. Only 30 certified producers in the entire world can legally make it. The EU protects the name like a patent. Anything else is just blue cheese. Even the London Stock Exchange once had a nickname “Gorgonzola Hall”, because of its greenish marble floors. One lovesick apprentice who couldn’t stay focused. The best things were never planned. ➕ Comment ‘BONUS’ and I’ll send you a free Beginners Guide + 350 Prompt Bible to Master AI 🦾 #gorgonzola #italianfood #cheesemaking #foodscience #europeanfood

I Finally Gave In… Comment “recipe” and I’ll show you exactly how I made this steakhouse blue cheese. After I posted my Korean fried chicken video, I got a ton of comments asking if the sauce in the background was blue cheese. Unfortunately, it was, and you guys have been asking me to post the recipe ever since, so here we are. I’ll be honest, I still think ranch is the superior sauce, but my four-year-old loves blue cheese. This is also the same kid I caught licking the steps at a movie theater because they smelled like popcorn, so take that information however you want. Either way, this blue cheese is actually really good, and it’s perfect for wings, burgers, sandwiches, or anything spicy. #recipe #bluecheese #wings #sauce #cooking

Man the food at this Irish pub is so incredibly good. It’s obviously made in house. It comes out hot and fresh and makes me drool 🤤 I had a video go viral this week and the people wanna know- can I taste? YEP. Not only do I have 20% of my base of tongue in my throat that tastes normally but we have taste receptors all over our mouth; we have taste buds on our lips cheeks and roof of mouth. Smell also plays a huge role in taste, and I still got that! A lot of people asked if my taste or smell has heightened or changed. Sort of? People assume I eat foods I didn’t like before… and well, this is kind of true. Not because I can’t taste them but my options are limited so I’ve opened up to trying more things. I eat eggs far more than I ever imagined. When I had a “choice” lol eggs gave me the chicken ick but they’ve become a comfort food. I used to not love biting into tomatoes because of the texture but now I’m a big fan of wet foods! Ha and I used to dislike avocado because it was mushy but now I sneak that good healthy fat into smoothies and on sandwiches etc! BUT I still do NOT eat fish. Or blue cheese. Or anything else I think is gross because yes I can still taste it 😂 Love yall!

Its history stretches back over a millennium, with the first records of its production dating to the year 879, making it the oldest known blue cheese in the world. Traditionally made from cow’s milk, Gorgonzola develops its signature blue veining through the introduction of Penicillium cultures, giving it both its striking appearance and complex taste profile. Over the centuries, Gorgonzola has become an iconic ingredient in Italian cuisine, enjoyed in everything from risottos and pastas to salads and cheese boards. Its rich heritage and unique flavor have earned it Protected Designation of Origin (PDO) status, ensuring that only cheeses produced in specific regions of Italy can bear the Gorgonzola name. Today, it remains a beloved cheese worldwide, admired not only for its historical significance but also for its bold, creamy character that continues to captivate cheese enthusiasts. #cheese #italy #didyouknow #educational #food

This Might Be the Bluest Cheese Ever!🤯 This is one of the bluest cheeses in the world — and to try it, you’d have to go to Brazil. It’s a Brazilian-style blue cheese with an intense blue appearance. To achieve that look, it’s wrapped in a non-toxic film and left to mature for about 30 days. The result is an extremely soft and creamy texture. Compared to traditional French blue cheeses, it’s much more affordable. That’s because cheeses from France are usually aged for much longer, which increases their complexity and price — sometimes reaching $120 to $180 per kilogram. Shorter aging — but still rich in flavor. #Cheese #FoodFacts #DidYouKnow #BlueCheese #FoodCulture

Cheese 🧀💛! That’s something Britain charged me. I have mild lactose intolerance like many East Asians do. I wasn’t a huge fan of cheese other than mozzarella, burrata, ricotta, mascarpone, and cream cheese (quite a lot actually 😂). But since living in Britain for over 20 years, I love having cheese and crackers. I can’t have a lot (it gives me a headache 🤕🥲), but I LOVE it. I still am not very adventurous when it comes to cheese. I love cheddar, Brie, and anything mild and milky 😄. No blue cheese please! My favourite combination is oat cracker + cheese + quince paste 😍. My husband would have cheese anytime, and the random bites of a block of cheese 🧀 straight from the fridge are so annoying, but he can’t be perfect 🤷🏻♀️😂. What’s your favourite cheese and which one are you, me or my husband? @verybritishproblemsofficial #cheese#korean#britsh#couple#funny

Garlic Parmesan Roasted Cauliflower. It features crispy, golden-brown florets seasoned with savory garlic and cheese, typically served with a creamy dipping sauce like ranch or blue cheese. Ingredients Main: 1 large head of cauliflower, cut into bite-sized florets. Seasoning & Oil: 2–3 tablespoons olive oil, 1 teaspoon garlic powder (or 3–4 cloves minced garlic), ½ teaspoon paprika, and salt and black pepper to taste. Cheese: ½ cup grated Parmesan cheese. Garnish: Freshly chopped parsley. Optional Coating: For extra crunch, you can add ½ cup panko breadcrumbs and dip florets in 2 beaten eggs before seasoning. Instructions Prep: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper. Season: In a large bowl, toss the cauliflower florets with olive oil, garlic (minced or powder), paprika, salt, and pepper until evenly coated. Add Crunch: Toss in the Parmesan cheese (and breadcrumbs if using) to coat the florets thoroughly. Arrange: Spread the cauliflower in a single layer on the prepared baking sheet. Avoid overcrowding to ensure they get crispy rather than steaming. Roast: Bake for 20–30 minutes, flipping the florets halfway through, until they are tender and have deep golden-brown, crispy edges. Serve: Garnish with fresh parsley and serve immediately with your favorite creamy dip.
