Mix, rise, shape, and bake in a Dutch oven. Ingredients (2 loaves) • 3 cups lukewarm water • 1 Tbsp active dry yeast (or instant yeast for faster rise) • 1½ tsp salt • 6½ cups all-purpose flour Method 1. In a large bowl, whisk water and yeast until dissolved. Stir in flour and salt until combined (dough will be sticky). 2. Cover and let rise at room temp until doubled, about 2–3 hours (or 1 hour with instant yeast). 3. Divide dough, shape into loaves, and let rest 20–40 minutes. There’s one secret ingredient in here that I never expected to work… but it did. Ingredients • 100g bread flour • 300g all-purpose flour • 60g raw sugar • Salt (to taste) • 2 tsp instant Yeast • Warm milk (just enough to bring the dough together) about 1 cup • 1 whole egg • 20g Kallowfit spicy mayo • Olive oil (I used Al Wali spray for ease) • 40g butter (mixed in) • Extra cold butter (for rolling into each dough portion) • Himalayan salt (sprinkle on top before baking) • Butter (for brushing after baking) Knead, rise, portion (I did 79g each), roll in cold butter using the Japanese shio pan technique, let rise again, spray with water, sprinkle salt, and bake until golden.
