15 Minute Focaccia Sandwich 🥪 Layered with fresh basic chutney, burrata and tomatoes that are marinated in salt, pepper, olive oil and balsamic vinegar. This is absolutely perfect for a quick lunch or a light dinner! Ingredients: 1 small Focaccia bread Burrata Basil chutney (recipe below) Tomatoes marinated in salt, pepper, olive oil and balsamic vinegar Chutney: 1/4th cup Basil 2 cloves garlic 1/4th cup coriander 3-4 cashews- soaked in hot water 1 tbsp lime juice 2 spicy green chillies Salt & Pepper to taste Process: - Soak the cashews in hot water for 10-15 minutes - Add everything to a blender - basil, coriander, garlic, cashews, lime juice, salt & pepper and blend till slightly coarse - Pre heat the oven to 200 C - Slice the focaccia in half , drizzle with olive oil and toast in the oven for 6-7 minutes - Toss the sliced tomato in salt, pepper, extra virgin olive oil and balsamic vinegar - To assemble, start with the bread, spread the chutney, add the tomatoes & burrata - Serve and enjoy! #sandwich #focaccia #breakfastideas #focacciabread #breads #easyrecipes

Let’s make Ciabatta! 🙌🍞 Sometimes the way bread recipes are written, with lots of technical words, can be off-putting for bread beginners, making it difficult for them to start a bread making journey. With this ciabatta recipe, I have tried to keep the idea of bread making as simple as possible by sharing basic and yet essential little techniques that will improve your bread making skills. The only challenge of this recipe is the hydration! It’s a wet dough! ☝️ Here are a few main tips and tricks for working with a high hydration dough: 👇 1 - If you are a beginner, use a large bowl to make the dough and knead the dough inside the bowl. There’s no need to put it on the work surface and make a mess. You’ll stress out and start adding lots of flour because it will be too hard to handle. When kneading, use one hand to hold the bowl and the other to knead the dough, keeping the hand holding the bowl always clean. 2 - Strengthen the gluten of the dough by giving the dough a few folds during the fermentation. The method I’m using in the video is called “coil fold technique” and is a type of strengthening action used to help develop gluten in the dough during the fermentation stage. By using this method you’ll notice that the dough will become more and more easy to handle without adding any extra flour! And remember, baking bread is a truly satisfying process and there’s nothing like the feeling of creating your own fresh loaf. So make sure you take things slow and enjoy the process! Crusty Rolls 💝 390ml lukewarm water (38-40°C) 3g instant yeast 1 heaped tsp honey 500g Bread flour (or any flour with at least 12% Protien) 10g Salt Whisk water and yeast, add honey and whisk again. Add flour and salt and stir till all the flour is combined. Scoop it up into a round shape, cover and rest for 20min (30 min if your home is very cold) after 20 min do 4 x stretch and folds. Wet your hand reach round grab some dough and fold it down. Turn the bowl 90° and repeat until you’ve done 4. Flip the dough fold it half and cover for another 20 or 30 min. Repeat with 4 stretch and folds. Cover with cling film and put in the fridge for 10-48 hours. This is the good bit and you can constantly keep a dough in the fridge and be flexible as to when you need bread or pizza Take your dough from the fridge, flour the of the dough (it’s sticky and it’s cooking in a cold tray so we need flour) flour the work surface and pour out the dough. Wiggle from side to side to get it out but don’t break the dough. You can scrape the sides to help it. Gently shape into a rough rectangle and cut into 6. With floured hands roll each piece up flip it seam side up and roll it the other way. Cup your hands around the dough and drag it towards you (for this stage less flour on work surface and more on your hands. Keep dragging till it’s a tight ball. Add parchment paper to your baking dish and add flour place the baps on there and cover and rest for 40min. Preheat your oven to 240C and add a roasting dish to the bottom half filled with water. Let this heat up with the oven to create steam. Bake for 10 min with steam at 240C turn the oven down to 190C take out the water dish and bake for another 13-15 min. Let them cool completely if you can before eating so they’re not gummy. To freeze slice open as soon as they’re cool and freeze airtight. Defrost airtight in just a couple of hours.
