CA KHO – CARAMELIZED CATFISH INGREDIENTS 2 lbs catfish steaks 2 TBSP minced garlic 1 large shallot, thinly sliced 3 TBSP fish sauce 1 tsp dark soy sauce, optional 1 tsp sugar 1 tsp black pepper 1 can coco rico (12 oz) ½ cup hot water (use microwave) TO CARAMELIZE 2.5 TBSP sugar 2 TBSP oil, I used avocado oil INSTRUCTIONS 1. Clean and prep catfish steaks 2. In a pan and with the heat off, add 2.5 TBSP sugar and 2 TBSP oil. NOW turn on heat. Allow this to caramelized stirring occasionally. Cook this until sugar becomes an amber color/ brown color. (Note: Be careful not to rush this because you can burn your sugar and once your sugar burns, you must start over. If you are new to this, I recommend starting your heat on a low- medium low. Also, your sugar might crystalize but continue to trust the process and continue cooking. Your sugar will eventually all melt and form into a liquid consistency. 3. Once sugar has browned, add minced garlic and sliced shallots. Cook or 2-3 minutes or until garlic and shallot become golden. 4. Add 3 TBSP fish sauce, 1 tsp dark soy sauce, 1 tsp sugar and 1 tsp black pepper. Combine well. Spread garlic and shallots evenly. 5. Add catfish steaks and allow to cook for 3-5 minutes before flipping. 6. Once catfish is flipped, add 1 can coco rico and ½ cup hot water. Bring this to a hard boil. During this process, there might be some foam/ scum that floats to the top, make sure to scoop it out. (note: if you scoop some garlic and shallots out during the process, that’s ok too!) 7. Once this comes to a hard boil, reduce heat and simmer until your sauce has reduced in half. It took me 10-15 minutes. 8. After sauce has reduced in half, crank heat to high and allow your sauce to reduce/ thicken. How long you leave your sauce to thicken for depends on your preference of how thick you like your sauce. 9. Once done thickening, garnish with chopped scallion, chopped thai chilis and black pepper. 10. Serve with rice and preferred soup… canh chua is a popular one!

Ca Kho To / Clay Pot Braised Fish is one of the classic, quintessential Vietnamese dishes, and it typically features catfish that’s been slow-braised in a sweet and savory sauce that’s honestly, nothing short of incredible. BUT, today, we’re doing a modern take on it, using buttery Black Cod instead. This dish is inspired by one of my favorite Vietnamese restaurants, @anchoviesandsalt, where they take nostalgic dishes, apply chef-driven techniques, and use better quality ingredients to elevate familiar dishes. Their ca kho to is one of the best things on their menu, so I wanted to recreate it at home! This dish gave me quite a bit of trouble during R&D, and I had to alter the traditional cooking methods slightly to accommodate for the black cod’s delicate texture. Catfish is a much firmer and heartier fish that lends itself well to the slow braising process, whereas black cod cooks fairly quickly and can easily fall apart into the sauce. So, to make this recipe work, instead of browning the fish in the caramel, it’s important to create the sauce first and let it reduce before adding the fish to the clay pot. This way, we can uphold the integrity of the black cod while still achieving the authentic feel and flavor of the dish. Cook until it turn into a dark brown caramel. Do not stir. Feel like you about to burn down the kitchen 😂. 2•Add garlic and shallots. Stir for 5 second. Add water and the rest of the ingredients. Mix well together. 3•Let it simmer for about 5 minutes then and chili 🌶. Do not overlap fish. 4•Covers and cook for 10 minutes. 5•Uncovers and flip. I made two different batches of ca kho for our house sitter, salmon and catfish, with the same recipe below. He loves Vietnamese braised fish so I think this will last him for a few days. 🐟😜 This is the recipe I’ve been using the past 2+ decades with minor tweaks. Ca Kho (Vietnamese Braised Fish) Recipe: 1-1.5 lb of fish (any kind) A - 3 tbsp sugar, 5-6 tbsp water B - 2 tbsp oil, 2-3 cloves garlic minced, 2 stalks of green onions (chopped), 1/2 tsp black pepper C - 3-4 tbsp of fish sauce, 1 tsp seasoning mix (2:1 sugar:salt), 1/2 tbsp sugar. - In clay pot or pan, cook “A” on low heat until brown. Keep an eye on this process because the caramel can get burnt fast. and you have to start over if it’s burnt. - Once the sugar is dissolved, add “B”. - Add the fish and “C” and simmer for about 5 minutes or so. Carefully turn the fish and continue to simmer until done. Add a few Thai Chili if you like it spicy. I usually turned the fish twice to coat the fish with the sauce. Do not over turn the fish. - Season to taste with seasoning mix, sugar, and/or salt. - Enjoy with a warm bowl of Jasmine rice. The more you cook the better you get at estimating measurements and tastes, so don’t give up. You’ll refine your taste/palate over time. The weather has started to get more chilly and this Vietnamese Caramelized Catfish (Ca Kho) instantly came to my mind. The taste, the smell, the color, literally everything about this dish is so comforting, especially when you have it with a bowl of steamy hot white rice. Ca Kho means braised fish in Vietnamese. Vietnamese Caramelized Catfish is considered one of the classic dishes that you can find in any Southern Vietnamese household. We love to pair this dish with Vietnamese Sweet and Sour Soup (Canh Chua), which I hope to make very soon and share the recipe with you all. All the ingredients for this delicious dish can be found at 99 Ranch Market, our go to place for weekly grocery shopping. One thing about 99 Ranch that I love is how they always have a fresh seafood section so I can specifically pick out my fresh catfish for Ca Kho. Ingredients: 1 medium-sized catfish 1 medium shallots, minced 4 green onions, separate white and green parts 2 tbsp cooking oil 1.5 tbsp brown sugar 2 tbsp chicken bouillon 4 tbsp fish sauce 6 oz. coconut water 1/2 cup water ground pepper to taste Instructions: - In a pan over medium-high heat, add the cooking oil and sprinkle a layer of sugar onto the oil - Heat until the sugar starts to melt and caramelize to a nice brown color - Turn the heat down to medium-low and quickly add in shallots and white parts of the green onions until fragrant - Add in the cat fish slices, flip once all the sides are evenly coated with the nice caramel color - Add in the chicken bouillon, fish sauce, coconut water, and water - Turn the heat to medium and cover the pan for 15 minutes - Open the lid and continue to cook the catfish until the sauce is thicken. It’s traditionally made with catfish (my faveeee) in a clay pot, but also tastes great with salmon 🍣, *but* it has to be a fatty type of salmon (belly, king, or Atlantic). This is one of my most favoritest Viet dishes especially when my dad 👨🏻 makes it 🥰😋 It’s the one dish I always request when we visit him in Florida 🌴. I asked him for the recipe & it’s safe to say that I nailed it after my 2nd try 👩🏻🍳🥲 Thanks Ba 👨🏻🍳♥️!! Here are his 3 DOS & DONTS for his OG version of #cakhoto (his exact words 🥲): 1. Absolutely NO GARLIC 🚫🧄 2. NO coconut soda/water 🚫🥥 3. Add a little bit of pork fat to help the sauce thicken Pro tip: save the pork fat that you trim from pork chops, pork loin, pork shoulder etc. Dice it & freeze them in a little reusable bag or container 👍🏻 CÁ KHO TỘ 2 tbsp sugar 2 tbsp raw pork fat (~ 1 tbsp cooked) 2 salmon steaks (~1.25 lbs) 2 tbsp fish sauce Black pepper, lots 1 sm onion, minced 2 - 4 oz water 1 tbsp sugar, or as needed — Add sugar to a heavy bottom pan such as a Dutch oven over med high heat. Allow sugar to brown & caramelize. While the sugar browns, add pork fat to a small pot & render until crispy. Add salmon steaks & coat in the caramel. Add fish sauce, black pepper, onion, & pork fat. Then add enough water half way up the salmon. Braise for 20 mins on med high to high to reduce liquid. Adjust seasonings to taste. Garnish with green onions. Ca kho - braised catfish is so good that even my 6-year-old asks for more!!! 🥰 It’s very important to clean it with salt and water before seasoning it to get rid of the fishy taste!!
