SPIRAL CUCUMBER SALAD (Korean Inspired) 🥒 i love making this! Cucumbers • 10 mini cucumbers • 2 to 3 tablespoons salt Dressing • 2 tablespoons gochugaru (Korean chili flakes) • 3 tablespoons rice wine vinegar • 1 tablespoon sesame oil • 1 tablespoon honey • 1 tablespoon gochujang • 2 cloves garlic, minced Optional Add-Ins • 1 tablespoon crispy chili oil • 1 teaspoon toasted sesame seeds 1. Prep the cucumbers Spiralize or thinly slice the mini cucumbers. 2. Salt & draw out moisture Place cucumbers in a bowl and sprinkle with salt. Toss well and let sit for 15 minutes to draw out excess water. 3. Rinse & dry Rinse cucumbers thoroughly under cold water to remove excess salt. Pat completely dry with paper towels. 4. Make the dressing In a bowl, mix together: • Gochugaru • Rice wine vinegar • Sesame oil • Honey • Gochujang • Minced garlic • (Optional chili oil) 5. Combine Toss the dried cucumbers with the dressing until evenly coated. 6. Finish Sprinkle with toasted sesame seeds before serving.

Place the cucumber in between two chopsticks to prevent the knife from cutting all the way through the cucumber. 2. On one side of the cucumber cut straight, vertical lines. Flip the cucumber and cut diagonal lines. Place cut cucumbers into a bowl & set aside. 3. Mix together the tahini, soy sauce, rice vinegar, honey, ginger, garlic, mayo and seasonings. 4. Pour sauce over the cucumbers, getting it in the cuts & crevices. 5. Garnish with peppers, cilantro, green onions and sesame seeds. Eat chilled!
