Line with parchment paper, then oil parchment paper as well. Cut the butter into 8 pieces, then combine with heavy cream in a microwave-safe bowl and microwave for 1 ½ minutes or until the butter melts and the mixture is hot. In a small, heavy-bottomed saucepan over high heat, add water, corn syrup and sugar, cooking until it boils. Cover with lid for 1 minute. Remove lid and attach a candy thermometer to the side of the saucepan. Continue cooking until sugar reaches 320°F and turns a deep golden around the edges, 5-10 minutes. Carefully and slowly pour the butter and cream mixture into the sugar in small batches, stirring to incorporate between each pour. Cook until mixture reaches 240°F, about 10 minutes. Carefully pour mixture into prepared pan. Let cool for 30 minutes, then sprinkle with flaky salt. Allow to cool completely (about 3 hours). Once cooled, lift caramel out of pan and use a sharp knife to cut into rectangles.
