🧑🏾🍳 MasterClass Lesson Seven 🥄 Celeriac Purée This basic technique can be applied to plenty of other veg to create lovely smooth purées that elevate your dishes. Ingredients: - celeriac 1 - double cream 300ml - miso 1-2 tsp 1. Skin celeriac and dice 2. Add to roasting tin with oil and seasoning. 3. Roast at 200°C for 30 mins with foil on then for another 10 with foil off 4. Infuse cream in the meantime - this is the time to add whatever flavour you want - I love adding miso to celeriac because it gives it a really umami undertone. Add cream to a saucepan along with any flavours you’d like to infuse (e.g. garlic, rosemary, thyme, miso etc.). Heat very gently for about 15 minutes, don’t let it boil. 5. Pass cream through a sieve. 6. Add celeriac to a blender with a little bit of the cream, add more cream if the celeriac needs loosening after a bit of blending. 7. If you are using something like a nutribullet, let everything cool before you blend it - otherwise the liquid will explode over your face and you’ll be really mad at me. 8. Always pass purées through a sieve to make sure they’re as smooth as can be. 9. Plate this however you like, a drop roche, a swoosh, a splat or a smear. 10. This is episode 2 of my series Forgotten Veg. You told me the ingredients you’re most unsure about and I am showing you how I like to use them! This week we are using celeriac to make a delicious gratin. If you were unsure about celeriac before, you will be obsessed with it after this! Ingredients: 1 celeriac 2 leeks 350ml vegan double cream 300ml unsweetened soya milk (or any other plant milk) 1 tbsp butter 1 tbsp olive oil 2 sprigs of rosemary 1 large bay leaf 1/2 a tsp ground nutmeg 1/4 of a stock cube 200g vegan cheese Salt & pepper Method: Peel and cut the celeriac in half, then thin slices. Plop them in water to stop from discolouring. Cut leeks in half lengthways, then slice finely into half moons. Sauté these in olive oil and butter on a low heat until soft. Set aside 50ml of cream and pour the rest into the leeks along with the milk, herbs and spices. Bring to a gentle boil and then leave to cool for 10 minutes. In an oven proof dish, spoon the creamy mixture into the bottom, layer the celeriac on top followed by some cheese. Repeat this process until everything is finished, ending with celeriac as the top layer. Pour over the remaining cream, sprinkle with salt and pepper and a final dusting of cheese. Bake in the oven at 190C for 1 hour (until browned and bubbling).
