CELERIAC SLAW 🥬 Follow @louiseclaireskitchen for more delicious and easy plant-filled recipes. Celeriac is sweet and slightly nutty, and absolutely delicious grated and tossed through light mayo dressing. I know it as Celeriac Remoulade, but it’s just as nice called a Slaw! It’s delicious as a side to rich winter stews, or if you go a few videos back, you’ll see I used it on a crispy mushroom burger. You’ll need 🥬1 Celeriac (celery root) 🫙4 or 5 tsp vegan mayo 🍋Lemon Juice 🍯Dijon Mustard 🧂Salt 🫒A little olive oil 🌿Parsley HOW TO: 1)Peel the celeriac, then grate or julienne. (I used the julienne grater on my food processor) 2)Finely chop parsley 3)Mix together the vegan mayo, mustard, lemon juice, salt and a little olive oil. 4) Mix the mayo with the celeriac and parsley. You’ll need to mix quite well, but it will all come together. Don’t be tempted to add too much mayo or it will end up gloopy. 5) Let stand for a bit to relax (like we all should do) 6) Then serve! CELERIAC STEAKS, CHILLI CRISP + TAHINI YOGHURT first time cooking with celeriac at home, and it did NOT disappoint. I decided to slice into steaks, score + sear, before basting in a miso garlic butter. then the steaks are sat on a bed of chilli crisp tahini yoghurt. I’ve written my full recipe for you, which can be found below. so enjoy, and as always, let me know if you give it a go! INGREDIENTS (serves 2) 1 large celeriac Olive oil, salt + pepper 250g greek-style yoghurt 4 tbsp tahini 1 tbsp chilli crisp 1 lemon 100g butter 1 tsp miso paste 4 garlic cloves, minced Chives Feta (I used plant-based alternatives) METHOD 1. Peel the celeriac by carefully slicing of the outer skin. Slice into 2cm thick steaks - you should get 4 from a large celeriac. 2. Season with salt + pepper, then lightly score with a smaller knife to help abosrb flavour + cook through. 3. To make the tahini yoghurt, simply whisk together the yoghurt, tahini, chilli crisp + lemon juice. Season to taste. 4. For the miso garlic butter, melt the butter in a saucepan, then add the minced garlic + miso paste, mixing well. 5. Warm a good glug of olive oil in a frying pan at a medium high heat. Sear the celeriac steaks (1 or 2 at a time), pressing down to help caramelise, for 3-5 minutes. Then flip + repeat. 6. Once the steaks are seared on both sides, begin to baste with the melted butter to help season + cook the steaks all the way through. Do this for another couple of minutes. 7. If your steaks aren’t cooked through, finish in the oven or airfryer for 5 mins (but after 10-15 mins of searing + basting they should be nice + tender) 8. To serve, spread the yoghurt in the middle of a plate. Place the celeriac steaks on top (2 per person), then drizzle with any leftover butter, fresh chives + more chilli crisp if you like 9. Maple mustard carrots ! w/ celeriac purée It’s the last full week in the run up to Christmas & I’ve got you covered with this carrot recipe 🫡 Ingredients 400g carrots 3 tbsp maple syrup 2 tbsp whole grain mustard 1/4 celeriac, peeled & cut into chunks 60ml soy cream 1 tbsp white miso Handful of carrot tops 1/2 lemon juice 1/2 a garlic clove, minced 4 tbsp olive oil 40g pecans, roughly chopped, toasted Method 1. Preheat your oven to 220°C 2. Wash & cut the tops off your carrots but make sure to save them for later 3. Lay your carrots out on a baking tray, add the mustard & maple syrup along with a drizzle of oil & a good pinch of salt then place in the oven for around 30 minutes until tender, turning half way 4. Meanwhile, make the purée: boil the celeriac for 15-20 minutes until fork tender then drain & add it to a blender with the miso & cream then blend until smooth & creamy 5. For the carrot top pesto: add the carrot tops to a blender along with the garlic, lemon juice, olive oil & a pinch of salt then blitz everything together until you have a pesto-like consistency (you may need to add a splash of water to loosen) 6. To serve: spoon the celeriac purée onto a serving dish then lay the carrots on top, drizzle with pesto & sprinkle with pecans #carrots #roastedveggies #celeriac #christmasrecipes #honeymustard #christmasdinner #ukfoodie #veganchristmas
