: 🍰 Heavenly Vanilla Cloud Cake ☁️🍓 Ever dreamed of biting into a slice of cake that tastes like sweet air? What’s your ultimate soft dessert—fluffy chiffon, sponge, or whipped cream magic? Ingredients: 1 cup cake flour (sifted) 6 large egg whites (room temperature) 1/4 teaspoon cream of tartar 3/4 cup granulated sugar 1/4 teaspoon salt 1 teaspoon pure vanilla extract 1/2 teaspoon almond extract (optional) 1 cup heavy whipping cream (cold) 2 tablespoons powdered sugar Fresh berries for topping (strawberries, raspberries, or blueberries) Directions: Preheat oven to 325°F (163°C). Do not grease your cake pan. In a stand mixer, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar and salt. Increase speed and beat until glossy stiff peaks form. Gently fold in sifted cake flour a little at a time using a spatula. Add vanilla and almond extract, folding just until incorporated. Pour batter into an ungreased 9-inch tube pan. Smooth the top with a spatula. Bake for 35–40 minutes, or until the top is golden and springs back when touched. Invert the pan and cool upside down completely. For whipped topping: beat heavy cream with powdered sugar until soft peaks form. Once cake is cooled, gently loosen from pan, top with whipped cream and fresh berries. Japanese cloud cake meets Quark! ☁️ It’s light, jiggly & delicately creamy, without the heaviness. Quark is Woolworths’ newest dairy innovation. It’s a beautifully smooth, cultured dairy that sits somewhere between yoghurt and cream cheese. It’s indulgent yet light, incredibly versatile, and works just as well in baking as it does spooned straight from the tub. Japanese Cloud Cake Ingredients: * 5 large eggs, separated (room temperature) * 450g Woolworths Quark (Plain) * 110g castor sugar, divided (40 g for yolks, 70 g for whites) * 55g cake flour * 25g cornflour * Pinch of salt Method: Preheat oven to 160°C (conventional). Line a 15 cm pan base & sides with baking paper (double the pan height). Wrap springform pans in 2-3 layers of foil to prevent water seepage Whisk quark, egg yolks, & 40g sugar until smooth. Sift in cake flour, corn flour & salt; whisk gently until just combined To another bowl, whisk egg whites until foamy, gradually adding 70g sugar. Whisk until soft peaks form Fold ⅓ of the meringue into quark mixture to loosen, then fold in remaining meringue in two additions. Stop once batter is airy & uniform Pour batter into pan, 2cm below the top as the cake will rise. Tap lightly to release large bubbles. Place pan in a deep roasting tray; pour hot water to halfway up pan sides Bake 55 min. Cake should rise evenly & jiggle slightly Turn off oven, leave door ajar 10 min Remove from oven & water bath; cool completely before unmoulding Peel away baking paper. Spoon chilled vanilla quark on top, garnish with raspberries & dust with icing sugar Slice & serve 📌 Note: Springform pans can be tricky when baking in a water bath, as water may seep through the base. If you have one, an enclosed (one-piece) cake pan is the safest option for this recipe.
