It’s simple, not all coffee is created equal. In fact, not even 20% of harvested coffee makes the cut for specialty. The rest? It’s regular coffee that doesn’t meet the standards for flavor, balance, and consistency. From there, it goes to the roaster. Roasting isn’t just pressing a button, each coffee has its own profile. Roasted perfectly, it unlocks sweetness, fruitiness, and complexity. Get it wrong, and it’s flat or bitter. Then comes freshness. Specialty coffee is roasted, packed, and delivered to reach you at its peak. No months of sitting on shelves, no stale flavors — just coffee that’s alive in every cup. And the final part? You. Brewing it properly is when all the work shines. Every sip is an experience — bright, sweet, complex — nothing like your average cup. So yes, specialty coffee costs a little more. But you’re not just paying for caffeine. You’re paying for quality, flavor, freshness, and a community of people who care about every cup.

| A day in the life of a coffee roaster | Roasting coffee isn’t a fast job, and it’s far from easy. It’s a slow, deliberate process built on hundreds of small decisions: the kind you make not because a screen tells you to, but because your senses do. A few degrees can change everything. The sound of the first crack, the way the colour shifts, the smell that fills the room, each one guides the next move. There’s no formula for it, just focus and experience. Every batch has its own mood. Some cooperate, some don’t. And through it all, the roaster keeps listening. To the machine. To the beans. And to the years of practice that make consistency look effortless. Behind every good cup, there’s this part of the story which is quiet, patient, and rarely seen. It can be tough to figure out what you’re doing as a new roaster. Here are three things I wish I knew when I was starting out: 1. There is no one “right” way to roast coffee. Every machine is different. Every coffee is different. And everyone’s palates are different. Coffee roasting is less about finding the “one right way” and more about honing your preferences (and/or meeting those of your employer or customers). 2. Small changes in your profile might make an impact in the cup, but what’s more important is being consistent roast-to-roast. Of course, it’s great to make incremental improvements if you can, but there comes a point where constantly tweaking your profile only gives incrementally “better” (read: different) results. It’s a game of diminishing returns. Find a profile that works for your coffee/machine/palate/customers, and move on to the next thing! 3. It’s not as hard (or scary) as it may seem. The screen readout might look like squiggly nonsense at first, and yes you’re playing with fire all day, and of course the work of the farmer/producer/exporter/importer/trader is now in your hands… but it’s also not that serious! Coffee roasting is a learnable skill. It takes time to get better and grow confident, but it’s not impossible. You can do it, just like the thousands of people who have done it before you. Methodical is my favorite local roaster here in Greenville, SC so this was such a cool experience.
