It can be tough to figure out what you’re doing as a new roaster. Here are three things I wish I knew when I was starting out: 1. There is no one “right” way to roast coffee. Every machine is different. Every coffee is different. And everyone’s palates are different. Coffee roasting is less about finding the “one right way” and more about honing your preferences (and/or meeting those of your employer or customers). 2. Small changes in your profile might make an impact in the cup, but what’s more important is being consistent roast-to-roast. Of course, it’s great to make incremental improvements if you can, but there comes a point where constantly tweaking your profile only gives incrementally “better” (read: different) results. It’s a game of diminishing returns. Find a profile that works for your coffee/machine/palate/customers, and move on to the next thing! 3. It’s not as hard (or scary) as it may seem. The screen readout might look like squiggly nonsense at first, and yes you’re playing with fire all day, and of course the work of the farmer/producer/exporter/importer/trader is now in your hands… but it’s also not that serious! Coffee roasting is a learnable skill. It takes time to get better and grow confident, but it’s not impossible. You can do it, just like the thousands of people who have done it before you. Methodical is my favorite local roaster here in Greenville, SC so this was such a cool experience. I always have a bag of Methodical at home, so seeing how it all comes together was really interesting.
