If your coffee tastes thin, papery, sour, has no body, watery or just has no life to it, it might be under extracted 😭 Easy fixes: 1. Lower dose (extracts less) 2. Raise yield (extracts more) 3. Tighten grind size (extracts more) Try one at a time and taste so you can figure out which step to take next. Your tongue is your guide! 🧭 Comment “UNDER” if you’re struggling with what under extraction really is and I’ll tell you what to fix #homebarista #espresso #dialingin #fyp #coffee

IMO over extraction is a lot easier to fix than under 🤓 If your espresso is Over here are some solutions that you can mess with 👇 1. Raise the dose 2. Lower yield 3. Grind coarser (LAST OPTION) Depending on how long it takes to pull your shot, changing your dose and yield have a big impact on the extraction, strength, and overall taste of your espresso Grind size is like resetting your canvas to start over so save that as the last resort 🙌 Comment “HELP” if you struggle with these concepts and I’ll tell you what to fix! #espresso #fyp #homebarista #dialingin #coffee

Dialing in isn’t so much about chasing the right numbers, it’s about controlling the extraction 🫡 When you’re pulling a shot, you are extracting flavors. When you extract too many compounds, this leads to over extraction resulting in bitters over powering the good parts of the coffee. When the compounds are not extracted enough meaning under extraction, then that can result in sourness, papery, thin flavors etc. Dialing in is simply adjusting variables (dose, yield, grind size) so extraction lands in the sweet spot. If your espresso doesn’t taste right, it’s not random, it’s feedback. Once you understand extraction you start dialing in with more intention stop guessing. 💯 If you’re struggling with dialing in your espresso comment “SPRO” and I’ll tell you exactly what to fix #espresso #fyp #dialingin #coffee #barista

For all my at home baristas look no further 🙅🏽♂️ Here’s how to dial in your espresso, step-by-step: 1. Know your beans 2. Find your grind size 3. Dose consistently 4. Yield the right amount in 30–35s #athomebarista #espresso #ninjaluxecafé #coffee #dialingin

Some espresso problems come down to one of these three things 👇 Bitter? Sour? Inconsistent? It’s not the machine—it’s extraction. 1. Grind size: grinding finer actually helps increase extraction. But don’t grind too fine because it could result in over extraction. 2. Consistency: you want to measure out your dose and yield so you know exactly how the espresso is extracting. This tells you what it will end up tasting like and helps keep each shot consistent. 3. Prep & Tamping: Lack of proper distribution and uneven tamps will result in uneven extraction and channeling which will ruin your shot every time if not done properly. J A N U A R Y #029 Don’t cheap out on your grinder. Great beans + bad grinder = flat, bitter, muddy coffee. What to look for… - Burr grinder (never blades) - Built for the brew you love - Consistency Grinders, I actually rate: Entry / Home Barista • Baratza Encore ESP – @baratzame • Wilfa Uniform – @wilfauk Prosumer / Espresso Focused • Niche Zero – @nichecoffee • Eureka Mignon Specialità – @eureka__grinders • Baratza Sette 270 – @baratza I’d rather brew on a basic machine with a great grinder than the other way around. In the world of espresso, channeling is the "path of least resistance." When you force hot water through a puck of ground coffee at high pressure (usually 9 bars), the water searches for any cracks, air pockets, or uneven density. Instead of flowing evenly through all the coffee, the water rushes through these weak points. This results in a "salty-sour-bitter" mess: the coffee in the channel is over-extracted (bitter), while the rest of the puck is under-extracted (sour/weak). Here's 5 guaranteed Steps to Avoid Channeling To get a perfect, syrupy extraction, you need to create a perfectly uniform "filter" of coffee. Here is how to do it: 1. Use a High-Quality Burr Grinder Blade grinders or cheap burr grinders create "fines" (micro-dust) and "boulders" (large chunks). The water will naturally race around the boulders and get stuck behind the fines. A consistent grind size is your first line of defense. 2. Practice WDT (Weiss Distribution Technique) I use tools from @normcorewares After grinding into your portafilter, use a tool with thin needles to stir the grounds. This breaks up clumps caused by static and ensures the density of the coffee is the same from the edges to the center. 3. Level Before You Tamp Before applying pressure, ensure the bed of coffee is flat. If the coffee is mounded on one side, tamping will compress that side more than the other, creating a density imbalance that water will exploit. 4. Apply a Level, Consistent Tamp The goal isn't to "crush" the coffee with maximum strength, but to remove all air gaps. Use a leveler or a spring-loaded tamper to ensure the puck is perfectly horizontal. A "slanted" puck is a guaranteed recipe for a side-channel. 5. Ensure the Filter Basket is Dry If your basket is damp before you add coffee, the grounds will stick to the walls, creating "edge channeling" where water bypasses the coffee by running down the smooth metal sides of the basket. #homebarista #espressoathome #coffeeritual #puckprep #latteartgram thirdwavecoffee coffeestation manualbrew dailycortado specialtycoffee

Cleaning your grinder is not optional. If you call yourself a barista, maintenance is part of the job. Old coffee oils oxidize. Retention builds. Flavor clarity disappears. You can measure extraction and weigh to 0.1g and talk about TDS, but if your grinder is dirty, your espresso is unstable. Cleaning your coffee grinder is the minimum professional standard. If your espresso looks like this, these three tools can seriously help fix it. The first one is a coffee scale. It doesn’t need to be fancy—just accurate to 0.1 g, with a shot timer, and small enough to fit on your drip tray. This is the only way to really know how much coffee you’re using and what espresso ratio you’re pulling. The second “tool” is actually two things: a dosing funnel and a WDT tool. Even the budget ones work really well. The funnel keeps all the coffee inside the basket, and the WDT tool breaks up clumps and helps distribute the coffee evenly. This makes a huge difference in preventing channeling. And the third tool is a leveling tamper. It helps you get a flat, even coffee bed every single time and saves you from a lot of bad shots. You can always add more tools later, but these three will make the biggest improvement to your espresso. . . . #coffeehome #coffeetips #brevillebaristapro #espresso #coffee

Hot take: upgrade your grinder before you upgrade the machine. ☕️ Think of the grinder as the engine. If it’s not doing its job, nothing else matters much. #BrickAndMortarCoffee #CoffeeNerd #HomeBaristaTips #EspressoSetup #CoffeeEducation
