You’ve probably been measuring wrong your whole life and yes, it actually changes your baking. Trick of the day: measuring vessels. I shared this before and people were surprised, so let’s break it down a little better. Dry measuring cups and liquid measuring cups are not interchangeable. The big glass cup with the handle is for pourable liquids like milk, water, oil, broth and you read it at eye level. The metal or plastic scoop cups are for dry ingredients like flour, sugar, rice, and oats. You fill and level. Now here’s where most people get it wrong: Thick scoopable foods like yogurt, sour cream, cottage cheese, ricotta, hummus, peanut butter are not liquids. They’re measured the same way as dry ingredients: fill the cup and level it, not pour. Measuring spoons (teaspoon and tablespoon) are used for both dry and liquid ingredients: salt, spices, baking powder, vanilla extract and similar ingredients. Does it matter? For cooking, sometimes. I know some of you measure one cup of flour as 140g. But the principle is the same: Go with the metric system. Most baking recipes provide measurements in grams (g). Use them. If I ask 10 bakers to measure 120g (or 140g) of flour, all 10 will measure exactly 120g (or 140g). If I ask 10 bakers to measure 1 cup of flour, we’ll likely get 10 different answers. Why? Because cups depend on: • How you scoop • How tightly you pack • Whether you fluff first • The humidity • The phase of the moon (probably, but not really) Flour and other ingredients are compressible.
