🟡 Cured egg yolks 🟡 are one of those things where if you go to a friend's place for a meal and they whip it out and start shaving it over things, you know they're serious about food and the food is probably gonna be guuud. 👨🏻‍🍳 But for such a restaurant-y, cheffy ingredient, it's actually SO unbelievably easy to make at home. It's literally just egg yolks and salt, plus a bit of patience (which maybe is the hardest bit for impatient people like me). 😶 Also some tips: 🌟 after curing, I baked them in the oven at 80°C for 45 minutes. It's just to dry them out a little more so they keep for longer. 🌟 these can be stored in an airtight container/glass jar in the fridge, and they last for months! I've had mine for 3-4 months and they're still super flavourful. So if you haven't already, try it! 🐣 ________ #cured #egg #eggyolk

Cured Kingfish beetroot & orange & Kingfish Gravlax Two pretty epic recipes for curing fish.   1 side of Sashimi grade king fish Curing mix 2 small beetroot(peeled and grated) 2 tsp pepper (crushed) 2 tsp roasted fennel seeds (ground) zest of an orange 200g brown sugar 300g rock salt Optional: 5 crushed Ooray Davidson Plums   Mix the beetroot, pepper, fennel, orange, salt and sugar in a bowl. Pour half of the curing mix into the tray, put the fish onto, then pour the rest of the mix onto of the fish, making sure it’s completely covered. Cover the tray and store in a refrigerator for 12 hours. Remove the fish from the salt. Wipe with a damp cloth.   I like to season with a touch more zest and pepper. It’s now ready to be sliced and served up. I popped some on a plate with fennel fronds, lemon and sour cream. Kingfish Gravlax 1 side of Sashimi grade king fish Curing mix 1 tsp pepper (crushed) 1 tsp fennel seeds 1 tsp coriander seeds zest of a lemon 200g brown sugar 50ml of gin 300g rock salt 1 bunch dill/ a hand full of flat parsley 1 tbsp Dijon mustard   Roast and grind the spices. Mix spices with salt and sugar and gin in a bowl. Pour half of the curing mix into the tray, put the fish onto, then pour the rest of the mix onto of the fish, making sure it’s completely covered. Cover the tray and store in a refrigerator for 12 hours. Remove the fish from the salt. Wipe with a damp cloth.   Finely chop the dill and parsley. Brush the fillet with mustard, cover this in chopped herbs and a little lemon zest and pepper. Wrap in paper and push down to secure the herbs. It’s now ready to be sliced and served up. Obviously not classic gravlax. Still great though, especially on a baguette with rocket, mustard and pickles.  #salt #cured #gravlax #beetroot #xmas

Full recipe by @chefryanwiebe below or Save to make later: Ingredients 4 egg yolks (farm fresh eggs work best) Spiceology Black Truffle Salt, as needed Cheesecloth Butchers twine Instructions Place a layer of the Black Truffle Salt in a non-reactive container and make 4 small indents with a spoon. Separate your egg yolks and place onto the salt. Cover the tops of your yolks with more salt and place in the fridge for 1 week. After 1 week, carefully remove your yolks from the salt. Place your yolks onto the cheesecloth and tie them up with the butchers twine. Let air dry in your fridge by hanging them for another 7 days, until dried out. Microplane your egg yolks over your favorite avocado toast or add to pastas.
