At one point in our meal at Sézanne in Tokyo last month, Evelyn said, “I might be biased, but I think Daniel’s food is really good!” Evelyn, you are not biased! Daniel’s food is spectacular! I loved Daniel Calvert’s food when he was at Belon in Hong Kong but honestly, it’s at another level now. He has the most amazing ingredients to work with, a very skilled team - both front of house and back of house - and (I hope) supportive management. Plus, a very elegant dining room at the Four Seasons Marunouchi (although it’s prettier during the day). Sézanne took top spot on Asia’s 50 Best Restaurants list 2024 and is #15 on World’s 50 Best. Because of Ethan Calvert (who is the friendliest, happiest and most beautifully dressed baby!), Evelyn and I were in the private dining room. We were lucky to be eating at the very end of the season for Japanese melons and heirloom tomatoes, so had the melon and oyster ravioli, and the tomato tart with burrata cream. The whole meal was at that same level - no misses at all, just deliciousness followed by deliciousness, including a new dish of curry-scented fried chicken (no, it won’t be served at Sézanne!). Last week our three back to back Best of Tokyo tours were a huge success. For me, one of the highlights was our lunch at ⭐️⭐️⭐️ @sezannetokyo . On the 7th floor of the Four Seasons Hotel Marunouchi, SÉZANNE presents an effortlessly elegant blend of French technique and Japan’s dazzling seasonal ingredients, under the direction of British-born chef Daniel Calvert. Calvert’s journey—from London to New York, Paris and Hong Kong—has honed a style that’s both deeply rooted in classical French cuisine and boldly Japanese in spirit. His mantra? “Consistency is key; anyone can shine once, but doing the same thing brilliantly… that’s a feat.” I really couldn’t fault this meal and I think this is truly one of the world’s best restaurants in terms not only of food but also in terms of service.
