Kothimbir Vadi 📝 Ingredients: • 2 cups finely chopped fresh coriander (kothimbir) • 1 cup besan (gram flour) • 2 tbsp rice flour (for crispiness) • 1 tbsp ginger-garlic paste • 2 green chilies (finely chopped) • 1 tsp red chili powder • ½ tsp turmeric powder • 1 tsp cumin seeds • 1 tsp sesame seeds (optional) • Salt to taste • 1 tsp sugar (optional) • 1 tbsp lemon juice • Water (as needed) • Oil (for frying or shallow frying) ⸻ 👩‍🍳 Method: 1. Prepare the batter: • In a bowl, mix coriander, besan, rice flour, ginger-garlic paste, green chilies, and all spices. • Add lemon juice and a little water to form a thick batter (not too runny). 2. Steam the mixture: • Grease a plate or tray. • Spread the mixture evenly (about 1-inch thick). • Steam for 15–20 minutes until firm. 3. Cut into pieces: • Let it cool, then cut into squares or diamond shapes. 4.
