I know it sounds strange, but these everything bagel-inspired donuts are downright delicious. Donut dough is neutral on its own, with the sweetness in donuts coming from the glazes & fillings. So… why couldn’t it go savory? Here I’ve used the same dough as my sweet donuts, but this time with a crunchy everything bagel crust & filling of cream cheese, sour cream, chives and scallions. Donut & Frying Tips: 1️⃣ High Hydration Dough = Lighter, Airier Donuts For donuts, you want a high hydration dough. More moisture = a lighter, airier texture, which is exactly what you want. 2️⃣ Rolling Into Balls > Using a Cutter For shaping, I prefer dividing the dough and rolling into balls instead of using a biscuit cutter. No scraps, no rerolling, and no need for a specific size cutter. 3️⃣ Proof on Parchment for Easy Transfer For proofing, let the dough rise on individual parchment squares. It’s a soft, high hydration dough, so this makes it much easier to transfer to the oil without deflating. They’ll release easily and you can remove the parchment with tongs. 4️⃣ Consistent Oil Temp = Better Donuts For frying, maintaining a consistent temperature is key. I like 340–345°F for donuts so they cook through without over-browning. A clip-on candy thermometer makes this much easier to monitor. 5️⃣ Have Everything Ready Before You Fry Once you start frying, you really can’t walk away, so have everything set and ready to go. 6️⃣ Look for the Fry Line Once fried, look for that white ring in the center (it’s called the fry line). It’s the part that didn’t touch the oil and shows your donuts were light enough to float (properly risen).
