This soup is clean savory, rich, and surprisingly meaty. Brewmaster Yun’s version, featured on Culinary Class Wars 2, uses smart cooking techniques to turn dried fish into a milky, soul-warming broth that rivals any traditional seolleongtang 📍Ingredients: • 2 whole dried pollack gutted and cleaned • 2 medium potatoes sliced • 1–2 tbsp perilla oil • 2L rice water (starch water from rinsing rice) • 1 piece dried kelp • 1 cheongyang chili pepper (or any green chili), whole • Soy sauce (to season pollack meat) • Sea salt (to taste) • thinly sliced spring onions Instructions: 1. Prepare the dried pollack by removing the head, tail, gills, and skin. Set aside the meat and reserve the bones and head. 2. Lightly toast the pollack bones and head in a dry pan until aromatic, this builds a deeper fish flavor. 3. In a separate pan, sauté diced potatoes over low heat in perilla oil. 4. Slowly add rice water to the pan, one spoonful at a time, stirring constantly until the potatoes turn soft and translucent. 5. Transfer the potato mixture into a pressure cooker. Add toasted pollack bones, kelp, chili pepper, and the rest of the rice water. 6. Seal and cook on high pressure for 10 minutes, then release naturally. The broth should appear cloudy and creamy, similar to bone broth. 7. Slice the reserved pollack meat and lightly marinate it with soy sauce. 8. Toast the seasoned pollack in a separate pot with perilla oil, slowly adding in the strained broth one ladle at a time. Let the fish turn tender and the broth reduce slightly. 9. Korean dried Pollack soup! Throughout history, pollock has been the most commonly enjoyed fish for Koreans. "Hwangtae" refers to a certain variety of dried pollock. They are frozen and thawed repeatedly around 20 times over 40 days during the frigid winter winds, until they become thoroughly dried and yellowish. Although the drying process requires enormous labor, the end product is a convenient foodstuff easy to store and use for home cooking. In Korea, there is no fish like the pollock, and certainly none with as many names. The freshly-caught pollock is called “saeng-tae;” frozen pollack, “dong-tae. Dried pollack has several names as well: the fully-grown one (when dried for about 60 days) is known as “bugeo,” while the young dried pollack is called “nogari.” The half-dried one is “kodari.” Finally, the one that becomes swollen with yellowish flesh due to multiple temperature changes is also known as “hwang-tae.” Although dried, pollock are plumpy. This dried fish has a subtle chewiness and though it's flavorful, not a lot of "fishiness." The most popular dried pollock dish is "bukeogook," which is a simple one: dried pollock soup. They are also enjoyed spicy and grilled as HWANGTAEGUI. And they are often served as a grilled and steamed side dish or an appetizer for drinkers. Hwangtae contains almost twice as much protein as fresh pollock as a result of the lengthy freeze-drying process. It also is a high-nutrient, low-cholesterol health food. HWANGTAEGUK (DRIED POLLOCK SOUP) I’ve loved this dried pollock (also pollack) soup ever since I tried it for the first time in Seoul in Dec 2018, when I had it at a now permanently closed makgeolli bar called Wolhyang. It tasted so clean but flavourful at the same time. I recall that the soup was called “bugeoguk” on the menu, but have since found out that it is also known as “hwangtaeguk”. Whilst “guk” means “soup” in Korean, if I’m not mistaken “bugeo” is for pollock dried naturally and “hwangtae” refers to pollock that has undergone multiple freeze and thaw cycles. Tbh, I couldn’t really tell you the difference in taste and when shopping at the Korean grocery, if it says “dried pollock” on the packet, you’re good. I’ve tried making hwangtaeguk using videos on YouTube, but a recent visit to a specialty restaurant in Seoul (look for Mugyodong Bugeogukjip in Part 4 of my Seoul Food series) helped me finetune my recipe. I think you really need to brown the fish well in sesame oil to remove fishyness, and give the fish enough time to simmer for depth of flavour. You can use more or less Korean radish, as it gives some natural sweetness to the soup to balance out the umami from the fish. I don’t usually say this, but salt or Korean soy sauce for soup is essential. GROCERY LIST FOR 1 PERSON • 50g dried pollock • 1 (or less) Korean radish • 1 egg • 1 bunch spring onion • 1 small box firm beancurd • 1 kombu / dashima the size of your palm • Sesame oil, salt, white pepper METHOD Prepare the dried pollock by trimming it to bite-sized pieces. I prefer doing this when the fish is dry but you can also do it post rehydration. To hydrate, soak in water for about 10 minutes. Squeeze excess water, no need to rinse or you’ll be washing away flavour. Brown very well in a pan with a drizzle of sesame oil. Set aside. In an oiled soup pot, stir fry Korean radish squares for 2 to 3 minutes, add browned fish, and ~500ml water. Simmer for about 30 minutes. Throw in dashima and simmer for another 5-10 minutes. Add beancurd and beaten egg. Once it comes to a boil, taste and season well. Serve garnished with chopped spring onion. #wolf_cooks

Saute thinly sliced potatoes, and gradually add some rice-rinsing water (or regular water) little by little, allowing the potatoes to soften. 6. Add the remaining water and charred pollack heads, dried kelp, and Korean green peppers. 7. Summer for about 20 minutes, then strain the broth and discard solids. 8. Pre-season torn pollack meat with soy sauce. 9. In the pot, add remaining 2 tbsp of perilla oil and saute the seasoned pollack for about 5 minutes. 10. Gradually add some of the strained broth while cooking, and add the remaining broth once incorporated. 11. Simmer together for 5-10 minutes. 12.
