【#吃好吃】平咗食多咗!屯門 JEP 改名 Half 首推半份手工意粉 招牌卡邦尼2.0 +油封蛋黃 開業5年的JEP by Involtini,7月時老闆兼大廚Jack宣佈,JEP將告一段落,餐廳換上新名字改成「Half」,菜式及裝修大變身,9月重新出發。 正如預告文那樣,Half by involtini於9月9日正式試業。 地點依舊,內裏裝修及氣氛換上灰藍色調,更見舒服精緻,天花飾有仿手繪教堂璧畫。大門口的石膏像及石柱裝飾簡約有氣派,羅馬柱延伸到坐椅靠背,枱上的迷你石柱可愛極了,也是放前菜用的打卡位置。 為甚麼改名叫Half?Jack說:「做咗咁多年,決定轉新concept;Half是半份意粉,Half亦係half traditional + half mordern,菜式有創新有傳統;Half亦有開心share嘅意思,加埋更多anti-pasto頭盤,兩三個朋友,點幾個半份意粉,試多幾種頭盤,比以往一人一碟意粉,價錢又唔會貴好多。」 大家最關心的招牌手工意粉仲有冇得食?紅蝦意粉、卡邦尼依然坐鎮其中,正如Jack所說,均加入新意思,像紅蝦意粉用了更濃郁的海鮮湯收汁,味道更佳;卡邦尼改頭換面,再不是黃澄澄,換上超闊意粉parpadelle,盛載更多醬汁;靈魂蛋汁更加濃郁。 Jack說:「以前蛋汁係最後落鑊一齊煮,而家跟傳統撈勻,上枱再加一隻confit egg,用豬面肉油做油漬蛋黃,蛋汁充滿豬油香味,入口雙重蛋香!!」 他以往做過不同版本的gnocchi,煙韌的、香脆的,現在回歸最傳統,即軟腍,入口即溶。配搭的牛面肉先用牛尾汁燴3-4小時;落單,煮成啖啖精華,最後加scamoza煙燻芝士,濃稠得來有拉絲效果,吃完整碟也不覺膩。 刺客意粉在香港少見,那是Puglia傳统郷土料理,Jack說「好像意大利版雙面黄」。意粉放入鑊煎,憑聲音斷定焦脆效果,上碟,跟burrata芝士拌吃,奶香平衡辣味。 Anti-pasto頭盤以往不多,現在新增幾項,類似tapas的威尼斯小食。做法新舊融合;像西瓜carpaccio,炸肉丸都有兩種;Jack最推薦:炸辣肉腸薯波,薯蓉用日本拉麵常用的煮干粉調味,中間塞入nduja微辣豬肉腸,咬開滲出辣油,他笑說是「意大利豬肉版明太子」。 熟客喜歡的千層薯仔風乾火腿,一層牛油汁,一層薄切薯仔片,砌成24層炸到外脆,內裏鬆軟,最後以惹味cajun mayonnaise和Parma ham提味。 Jack說頭盤由三四十元起,全部功夫和心機,多點幾款,大家開心share!半份意粉男生、女生够吃嗎?他笑說:「半份沒可能够吃,正如去麥當勞食半個鱼柳包,我們係半份概念,多叫幾個半份,一定夠!」暫時餐廳免收加一,作為手工意粉fans,不可錯過!! 傳統卡邦尼超闊麵油封蛋黃$158/Full 西班牙紅蝦手做意大利油麵$200/Half $380/Full 刺客意粉$140/Full 澳洲牛面肉手做意式薯團(Gnocchi)$120/Half $200/Full 炸辣肉腸薯波$35 千層薯仔風乾火腿$38 Half by involtini @half_by_involtini 地址:屯門良德街8號珀御地下G05號鋪 電話:6467 6534 營業時間:星期一至日12nn-3pm 6pm-10pm #手工意粉 #卡邦尼 #紅蝦意粉 #刺客意粉 #gnocchi #炸肉丸 #屯門美食 #花華和食屋 #Halfbyinvoltini #TalkFood #TalkFood屯門
