Cardamom buns and princess cake at Brooklyn’s newest bakery 🥐 Ferrane Bakery (@ferranebakery) in Brooklyn Heights brings together the flavors of Sweden and Scandinavia with a creative twist inspired by East and North African traditions. 🥐 Ferrane Bakery was founded by Selim Adira, of BonBon, and Emon Maasho, of Orrefors & Kosta Boda. Both were born in Sweden, Adira to Moroccan parents and Maasho to Eritrean parents. The bakery’s name, Ferrane, pays tribute to their roots, drawing from the Moroccan term for “community oven” to reflect their shared heritage. The name “Ferrane” comes from the Moroccan word for “community oven,” nodding to Adira’s Moroccan roots and the bakery’s mission of fostering community. 🏠The bakery is located in the building of the historic St. George Hotel, featuring custom white oak shelving for breads and a distinctive “croissant sofa” by Danish design firm Gubi. 🥐 Ferrane’s pastry case showcases an array of Swedish treats, thanks to lead baker Mathilda Jacob, the reigning Young World Champion in baking. She’s developed cardamom and cinnamon buns, as well as vegan versions in vanilla and chocolate. The bakery also offers Swedish classics like princess cake, served in a silver coupe reminiscent of a sundae, and dammsugare—“vacuum cleaner” cakes made by blending cake crumbs with butter, cocoa, sugar, and spiced punch liqueur, then shaping the mixture into logs, wrapping them in marzipan, and dipping them in chocolate. 🥖 Beyond pastries, Ferrane bakes an extensive selection of Swedish breads using flour from Brooklyn Granary & Mill. The lineup includes traditional sourdough baguettes, focaccia, brioche, kavring (a dark, dense rye), several types of crispbreads, sirapslimpa (a molasses-rich loaf), and formfranska, a classic sliced sandwich bread.
