RECETA FINANCIERS!🫐 Creo que no es casualidad que este sea el único producto que se hacía en todos los lugares en los que trabajé. Es que son tan ricos, tienen un sabor tan particular que te enamora al primer bocado. La combinación de manteca noisette y harina de almendras es magia! Esta receta milenaria se remonta a al siglo XVll. Nació en Francia y su nombre y formato de lingote está inspirado en los banqueros y financieros de la época, de ahí su nombre “financier”. El formato original son estos pequeños lingotes que simulan lingotes de oro, pero si no tienen este molde lo pueden hacer en formato de cupcakes. Tengan en cuenta que esta receta no tiene polvo de hornear, crece por la evaporación de agua de las claras, y se necesita que el formato sea pequeño para que tenga más superficie de contacto y pueda crecer bien. Si lo quisieran hacer en un formato más grande, pueden hacerlo tranquilamente pero agréguenle 1 cdita de polvo de hornear (para las cantidades que les comparto abajo). Cualquier pregunta me la pueden dejar en comentarios ❤️ Y ya saben, si los hacen quiero ver esos resultados!🤩 INGREDIENTES: 180 g azúcar impalpable 90 g harina de almendras 60 g harina 0000 150 g manteca (peso inicial) 165 g claras de huevo Por arriba le pueden poner: almendras fileteadas (los más clásicos), frambuesas, arándanos, dulce de leche y coco, chocolate, o lo que se les ocurra! PROCEDIMIENTO: 1. Realizar una manteca noisette, colocando la manteca en una olla y llevando al fuego hasta tostar. Van a ver que en un momento se hace mucha espuma y sube, ahí apaguen el fuego. Una vez lista, colar y dejar entibiar. 2. Mezclar todos los secos y agregar las claras. Integrar con un batidor de mano. 3. Luego agregar la manteca noisette. Integrar. 4. Dosificar en los moldes hasta 3/4 de su altura. Agregar el topping elegido (también pueden no ponerle nada) 5. Precalentar el horno a 180ºC por 15 minutos.
