Sear in 1 tbsp olive oil over medium-high heat 3β4 minutes per side; remove and keep warm. Add remaining olive oil; sautΓ© onion until soft. Add garlic and cook briefly. Season both sides lightly with salt and black pepper. Set aside while you start the sauce. 2οΈβ£ Start the tomato sauce Heat the olive oil in a wide skillet over medium heat. Add the garlic and cook gently for about 30 seconds, just until fragrant. Do not let it brown. 3οΈβ£ Simmer gently Add the tomatoes, a pinch of salt and pepper, and the oregano if using.
