🥣 Fruit Custard Recipe Ingredients: • Milk – 2 cups • Custard powder (vanilla) – 2 tbsp • Sugar – 2–3 tbsp (adjust to taste) • Mixed fruits (1–1½ cups), chopped Best fruits: apple, banana, grapes, pomegranate, chikoo, mango ❌ Avoid: pineapple, papaya, citrus (they curdle the custard) Optional add-ons: • Chopped nuts (almonds/cashews) • A pinch of cardamom powder • Fresh cream (1–2 tbsp) for extra richness 👩‍🍳 Method: 1.Take ¼ cup cold milk, add custard powder, mix well—no lumps. 2.Heat remaining milk in a pan. Add sugar and stir till dissolved. 3.Lower flame. Add custard slurry slowly, stirring continuously. Cook till it thickens (don’t overcook). 4.This step is important—hot custard + fruits = disaster 😅 5.Once fully cool, mix in chopped fruits gently. 6.Refrigerate for 30–60 minutes. Ingredients- 1 ltr milk 1/2 cup sugar 3-4 tbsp custard powder Chopped fruits and dry fruits Fruit Custard Recipe – Making Custard Sauce - 1. Take milk in a thick bottomed pan or saucepan and keep it on the stove top. Bring the milk to a gentle heat or simmer. 2. In a small bowl, take 3 tablespoon warm milk from the saucepan. Add 3 tbsp custard powder. 3. Stir very well to make a smooth slurry or paste without any lumps. 4. When the milk has come to a gentle heat, add the sugar. Stir very well so that the sugar dissolves. 5. Keep the heat on a low and then add the custard paste at a time in small portions. 6. As soon as you add one portion of the custard slurry or paste, stir quickly so that lumps are not formed. Finish off all the custard paste this way. 7. Keep on stirring often while the custard is cooking, so that lumps are not formed. Cook for about 5 to 6 minutes on a low heat. 8. The mixture will thicken slowly. For a thicker custard, cook for a few more minutes. Allow the custard to cool at room temperature. Also keep in mind, that as the custard cools, it will thicken more. You can also keep the custard in fridge to chill it before adding the fruits. For Fruit Custard - 1. Chop the fruits. Use seasonal fruits. 2. Once the custard has cooled, add the mixed fruits. Combine to mix. 3. Ingredients 500 ml milk 2 tablespoons custard powder 1/4 cup sugar (or 1/2 cup sweetened condensed milk instead of sugar) 1/2 teaspoon vanilla extract (optional) A few strands of saffron (optional) 3–4 cups mixed fruits of your choice (strawberries, mango, grapes, apple, banana, pomegranate) 1/4 cup chopped nuts (optional) Method In a small bowl, mix the custard powder with a few tablespoons of milk to form a smooth slurry without lumps. Heat the remaining milk in a pan over medium heat. Add sugar or sweetened condensed milk (if using) and stir well. Add vanilla extract and saffron (if using) and mix. Once the milk is warm, pour in the custard slurry and cook on low heat for 2–3 minutes, stirring continuously until it thickens to a smooth, pourable consistency. Turn off the heat and allow it to cool completely. Refrigerate until well chilled. Just before serving, add the mixed fruits and chopped nuts. Mix gently and serve cold.
