By cutting or pulling the scapes, the plant stops sending energy to the flower and instead directs it into growing a larger, healthier garlic bulb underground. Two ways to preserve spring garlic 🧄 🍃 Spring garlic is just young garlic before the bulbs have started to develop. It’s a bit more vegetal in flavor especially around the green part! You can cook it and use it the same way as regular garlic or you can make little projects out of it to extend the spring flavors. For the green garlic powder remove the tops and separate the layers and give them a good rinse. Lay out flat on your dehy tray and dry at 115°f/46°c for 48hrs Once dry blend into a fine powder with a pinch of salt Alternatively if you don’t have a dehydrator you can preheat your oven as low as it can go, turn it off, place the garlic inside and let it cool down with the garlic inside. Remove the garlic and repeat this process until the garlic has dried completely. It’s not the fastest method but it works. Store your garlic powder in an airtight container somewhere cool and dry for up to a year For the fermented garlic: on a scale place the clean jar you’re going to use and clear (tare) the weight so the scale reads 0, pack the garlic you wish to ferment into the jar. Cover with water and divide the weight by 3% that is how much salt you will use. For example if the weight is 300 grams you will add 9 grams of salt. Pour off the water from the jar and dissolve the salt in it. Add it back into the jar and make sure everything is submerged by using a fermentation weight or a baggy filled with water to weigh it down. Let sit at room temperature for 3-7 days opening the lid every day to let excess gas escape. my sweet spot was 4 days I enjoyed the flavor at that point. Store in the fridge for up to 6 months. - the top green portion gets somewhat slimy during the ferment so I usually remove it for that reason specifically-
