How to make a ginger bug: Day 1: add 2 tablespoons of chopped ginger (keep skin on as there's lots of yeast and bacteria on it that we want to cultivate), 2 tablespoons sugar, and 2 cups of water into a jar. Cover with coffee filter or paper towel and place into a dark place overnight Day 2. add 1 tablespoon chopped ginger and 1 teaspoon sugar. You might see some bubbles starting to form Day 3-10ish. Repeat day 2 procedure. Your ginger bug will probably go cloudy, and even stop producing bubbles for a few days. This is normal, it's going through a phase called microbial shift where some of the weak yeast strains start to die off and the strong ones are multiplying. We want that. It's not dead, just continue feeding it until it starts producing bubbles after every feeding. Cloudiness is also normal. On the skin of ginger live wild yeasts and lactic acid bacteria. Feed them sugar, and the magic begins: ✨ Yeasts turn sugar into carbon dioxide and a little ethanol ✨ Lactic acid bacteria create lactic acid for tang and preservation Seal it in a bottle to trap the carbon dioxide and you’ve got real, naturally carbonated soda. My favourite flavours: 1. just ginger 2. black currants to make cassis (from my garden) 3. red currants (from my garden) 4. cranberry 5. green tea How start a ginger bug? A ginger bug is like a sourdough starter. You need to feed it to keep it alive. Ginger bug starter 🍹✨ Ingredients: 350 ml clean water 1 tbsp unpeeled fresh ginger, chopped (important: must be organic!) 1 tbsp cane sugar Method: 1️⃣ Chop the unpeeled ginger into small pieces (don’t peel, because the skin has wild yeasts!). 2️⃣ Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen. 3️⃣ Cover loosely with a cloth or lid and keep at room temperature. 4️⃣ Every 24 hours, feed with 1 tbsp chopped ginger and 1 tbsp sugar. Make a Ginger Bug Probiotic Starter 🫙🫚 Autumn is preservation season! 😊 and fermentation is one of my favourite methods for ensuring I can store and prolong the shelf life of the summer garden harvests to use throughout winter. 🫙🍅🌶️🫚 With only three ingredients, a ginger bug is one of my staple starter cultures as it’s just so easy to make. 😊👍🏻🫚 First, I chop or grate the ginger, leaving the skin on as it contains the beneficial bacteria and wild yeasts we need for fermentation. 🫧🫙 I use organic or home grown ginger if possible, as conventional types are often treated, and only use filtered water as chlorine will reduce good bacteria. 😕 I mix that with unrefined cane sugar and water as a food source, shake well, remove the lid and replace with a cotton cloth, or something similar, and place it at room temp or above for 24 hours. 🫙👀 I then feed the ginger bug extra sugar and ginger daily for around 5 days and as the bacteria and yeast continue to consume the sugar they emit more and more carbon dioxide in return, which creates all the bubbles. 🫚🫧 My Ingredients To a jar I add: 6 tsp of shredded or chopped ginger (with skin on) 4 tsp of organic unrefined sugar Top up the jar to around 3/4 full with filtered water Then add 2 tsp of ginger and 2 tsp of sugar daily for 3-5 days. Stop buying soda and make your own! Follow along for my upcoming fermented soda series.  A ginger bug is a naturally fermented starter made from ginger, sugar, and water.
 The amount of sugar will not be in the final product.
 Here is how to make a Ginger Bug:
3 tbs. fresh ginger (leave the skin on), chopped or grated 
3 tbs. Organic cane sugar, maple syrup or raw honey
2 cups filtered water Directions:  Place grated ginger into a clean jar. Add water and sugar and stir with a non-metal utensil until the sugar has dissolved. Cover with a cloth and elastic or canning ring. Feed the ginger bug daily for 4 days or until small bubbles appear. You will need to give it 1 tbs. grated ginger with 1 tbs. sugar daily and stir well. Over time, you will notice it will start forming bubbles. This is when it is ready! You can use it right away for a homemade soda recipe or you can place it in the fridge to “sleep”. To maintain, feed it 1 tsp. ginger and 1 tsp. sugar once a week. This is the first step to making homemade fermented soda. It’s a wild fermented starter that captures natural yeasts from the air using ginger + sugar! Once ready, it acts just like a soda starter perfect for homemade fizzy drinks. 🍷 🫚How to Make a Ginger Bug:
In a sterilised jar, 🫙 mix:
• 2 cups filtered water 💦 
• 1 tbsp grated or chopped organic ginger (SKIN ON!)
• 1 tbsp sugar (or any sweetener of your choice) Stir well until the sugar dissolves and leave it in a warm, dark spot.
🧡 Every day, around the same time, feed it:
• 1 tbsp ginger
• 1 tbsp sugar Keep going daily until you see a foamy top layer usually between 2 to 10 days. That’s when you know it’s alive and ready to use! 🫧 Once it’s ready, strain and use the liquid to make sodas! I’ve got tons of soda recipes coming your way, so stay tuned. 🌱 To maintain your ginger bug:
• Stir and strain out 1/4 cup of liquid (use this to make your soda).
• Discard or compost the strained ginger.
• Add back 1/4 to 1/3 cup sterilised water
• Feed it again with 1 tbsp ginger + 1 tbsp sugar
• Stir well, and that’s it! Refrigerate if you don’t plan to use it right away, and feed it once a week with the same ratio.
