Rum will give you a sweeter vanilla bean flavored extract and vodka will give you a pure vanilla bean taste. You can also use whiskey which will give you a slightly smokey and sweet flavor. I used.. - 4 organic Madagascar Vanilla Beans, split lengthwise to help speed up infusion - for every 12 oz of alcohol (alcohol must be 80 proof) > Place the beans in a swing top bottle and fill just so you have ¾ inch headspace with alcohol of choice. > Close and let sit in a cool, dark place to infuse for 6-12 months, giving it a good shake every month. The same beans can be used 2-4 times! You'll be able to tell once the flavor starts to diminish. Homemade vanilla extract makes for a great gift!
