Do you smoke a brisket fat side up or fat side down? Well, we do a little of both.🥩🔥 You may have noticed in one of our last videos that we smoke our briskets fat side down. We do this for the first 8 hours of the cook. We used to smoke them fat side up with the thinking that the fat cap melted and dripped through the meat - science has since proven that wrong. Cooking fat side down for those first 8 hours helps protect the meat. Once that fat cap renders and starts to get nice and mushy, we flip it over and move it to a hotter section of the smoker to develop that nice, dark bark you know and love. #brisket #bbq #bbqscience #meatscience #seattle
