With just a few simple ingredients like rice flour, coconut milk, and a hint of turmeric, you can whip up this traditional treat in no time. Perfectly fried until golden and topped with a rich jaggery drizzle for that extra sweetness 🤍 Ingredients: • 250g rice flour • 1 1/4 cups coconut milk • 1/4 tsp turmeric powder • Salt to taste • 1 tsp sugar Method: 1. Mix rice flour, turmeric powder, salt, and sugar. 2. Add thick coconut milk and make a smooth, slightly thin batter. 3. Heat the kokis mould, dip it into the batter, then fry until golden brown. 4. Let it cool and crisp up. For the topping: Melt 250g jaggery with 1/4 cup water until you get a smooth, pourable syrup (not too thick or too thin). Drizzle over the Kokis, lightly dust with plain flour, and store in an airtight container. Welcome to my new series “The Avurudu Edit: Classic Recipes Reimagined” In this series, I will take you through some classic Sri Lankan dishes, that have a few fun twists and flavour explosions - with @silvermill_coconut This is Episode 1: Pretty, Spiced Kokis These kokis babies are pastel hued and beautiful, with a hint of spice. Feel free to go heavy with the spices adding chilli powder, pepper and cumin. Toss the hot, freshly fried kokis in spices too, for an even hotter kick. Ingredients: 300g raw rice flour 1 egg 1 x 330ml Silvermill coconut milk 150-160ml water 1 tsp salt 1 tbsp sugar 2-3 tsp Jaffna curry powder 2-3 tsp garlic powder 1-2 tsp chilli flakes 1-2 tsp pepper 1/2 tsp turmeric 1/3 cup finely chopped curry leaves Food colouring of choice Silvermill coconut oil, for frying 1. Sift rice flour into a bowl. 2. Add egg, coconut milk and mix. 3. Whisk in water gradually, till you get a thick smooth batter. 4. Mix in salt, sugar, curry leaves and spices. 5. Divide batter into three bowls, add food colouring to two, turmeric to the 3rd. 6. Heat oil in a deep pan, dip the kokis mould halfway in the batter and place in hot oil. Avoid completely dipping the mould in batter, as it may stick. 7. After 12-15 seconds, using a cocktail stick if needed, gently remove the mould. 8. Fry both sides for a few minutes more until crisp and golden. 9. Remove fried kokis from oil, cool in a dish lined with paper towels to absorb the excess oil. Best eaten warm! To make tri-coloured kokis, add dollops of pink and green batter closely in the yellow. Dip the mould in the middle, to get all three! Chocolate Drizzled Colored Kokis - a sweet, crunchy treat with a colorful twist for your Avurudu table 🪔✨ Ingredients: For the batter: • 200g rice flour • 3/4 cup thick coconut milk • 1 egg • 1 1/2 tbsp sugar • 1/2 tsp salt • Oil for deep frying • Keells food coloring (colour of choice) For the chocolate drizzle: • 100g dark or milk chocolate Method: The batter: 1. In a mixing bowl, add the rice flour and egg, and whisk. 2. Add the coconut milk, salt, and sugar, and mix well until a smooth batter forms. 3. The batter should be the same consistency as dosa batter. 4. Divide the batter into separate bowls and add Keells food coloring to each, mixing well to create different colours. Shaping and frying: 1. Heat oil in a heavy-bottomed wok or frying pan. Hold the kokis mould in the oil for a few seconds to heat it up. 2. Dip the heated mould into the batter, then carefully place it into the hot oil. 3. Do not fully submerge the mould, so it’s easier to release the kokis. 4. Once the kokis start separating from the mould, fry until golden and crisp. 5. Remove from the oil and drain on paper towels. Continue with the remaining batter. Chocolate drizzle: 1. Melt the chocolate in a heatproof bowl over simmering water or in the microwave in short bursts. 2. Add vegetable oil and stir until smooth. 3. Drizzle the melted chocolate generously over the fried kokis. 4. Let the chocolate harden before serving.
