For me, who lives on the coast of the Baltic Sea, it is satisfying to prepare seafood with local ingredients such as sea buckthorn or how we call them ‚lemon of the north‘. FIT FOR A QUEEN Ep.11: LANGOUSTINE & GRAPEFRUIT CEVICHE🦐🍊 Alright guys this one was a beauty, and a more refined dish from me, so clean on your pallet i ate this all in one go and still wanted more! Its super simple and involved virtually no cooking. Just some acid and a trusty blowtorch! Langoustine Ceviche🦐 1 Pink Grapefruit 1 Lime 7 Langoustines 1 Birds Eye chilli 2 Tbsp Fish sauce 1 tbsp Sesame oil 1 tbsp Olive Oil 2 tbsp Mirin Salt Garnishes Burnt grapefruit Trout roe Raddish Red chilli Cress Grapefruit zest Remove the skin of the grapefruit with a knife and segment each bit, cut the segments into little pieces and place most of them on a tray. Blowtorch until burned then place in the fridge, be sure to keep some un burnt for garnish too. Squeeze all the trimmings into a bowl and add the juice of one lime Prepare your langoustines by removing the head, shell and poo sack. Add the chilli and fish sauce to the grapefruit/lime juice. Place each langoustine into the citrus bath for about 6-8 minutes or until they have become opaque. Then remove and place onto a rack with a tray underneath, season with salt and use a blowtorch to colour - it’s important there is space for air to circulate so the langoustines don’t cook through/heat up too much. Once torched place in the freezer to cool down quickly, they must be fully cold before you plate them. Prepare all the garnishes you want to use. Add the oils, mirin and salt to the left over citrus liquid, this will be used as a dressing Then get the langoustines on the plate with a little piece of each garnish on them, pour the dressing on the plate and serve immediately, Enjoyyyy x I used Langoustines from Lidil’s freezer section✌🏾 #cooking #recipe #langoustine #prawns #prawn #langoustines #grapefruit #ceviche #chef #ffaq #fitforaqueen
