La Paz Batchoy 🍲 - a famous noodle soup dish from La Paz, Iloilo City Philippines. Batchoy came from the Chinese word “Ba-chui” which means pieces of meat. It’s said that there’s a Chinese community who lived in La Paz district. Most of noodle dishes we enjoy today are heavily influenced by Chinese cuisine. Batchoy is made with a flavorful soup stock from beef and pork bones simmering for hours seasoned with different spices and served with egg noodles, slices of pork meat, liver and offal (if available) crushed chicharon, fried garlic and scallions. You can also add raw egg to make the soup even richer. Best eaten with a side of puto or pandesal. —— My husband is from Iloilo and we make sure whenever we visit his hometown we’ll have a bowl of batchoy. It’s really delicious and one of the best noodle soup dish I’ve eaten.
