The most delicious and moist Pumpkin Spice Coffee Cake for this long weekend! 🎃 Recipe and video by: @simplyplatedbylindsey 🧡 Pumpkin Spice Coffee Cake 1/2 cup unsalted butter room temperature 3/4 cup granulated sugar 2 large eggs 1 cup Libby's Pure Pumpkin 1/2 cup sour cream 1 1/2 tsp vanilla extract 1 1/2 cup all-purpose flour 1 1/2 tsp baking powder 1 tsp baking soda 2 tsp ground cinnamon 1/2 tsp ground nutmeg 1/2 tsp ground ginger 1/4 tsp ground clove 1/2 tsp salt Cinnamon Sugar Layer 1/4 cup light brown sugar 1/4 cup granulated sugar 1 tbsp ground cinnamon Cinnamon Crumble Topping: 5 tbsp unsalted butter room temperature 2/3 cup light brown sugar packed 1/3 cup granulated sugar 2/3 cup all purpose flour 1 tbsp ground cinnamon 1/4 tsp salt Directions 🥣 1-Preheat oven to 350 degrees F. Grease a tube pan. Set aside. 2- In the bowl of a stand mixer, cream together room temperature butter and granulated sugar for 3 minutes until light and fluffy. Add in eggs one at a time, beating well after each addition. Beat in pumpkin puree, sour cream and vanilla extract. 3-In a separate bowl, whisk together flour, cinnamon, nutmeg, ginger, clove, baking soda, baking powder, and salt. 4-Add dry ingredients to wet and beat until just combined. 5-To make the cinnamon sugar layer, whisk together granulated sugar, light brown sugar, and cinnamon until fully combined. 6-To make the cinnamon crumble topping, whisk together flour, light brown sugar, granulated sugar, cinnamon, and salt. Add in cubed room temperature butter. Using your hands, incorporate the butter into the dry mixture until pea-like pieces are formed. 7-Spread half of the batter into the prepared tube pan. Spread the cinnamon sugar evenly on top. Spread the remaining batter on top. Sprinkle the cinnamon crumble mixture on top. 8-Bake for 45-50 minutes. 9-Cool for 30 minutes prior to removing from the tube pan. 10-Dust with powdered sugar (optional). Store tightly covered at room temperature for up to 5 days. Enjoy!!

Eggless Chocolate Chip Cookies bc you always deserve your sweet treat 🍪 You need: 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup (2 sticks) butter, softened 3/4 cup packed brown sugar 3/4 cup granulated sugar 1/3 cup plus 1 tablespoon Libby's Pumpkin 1 teaspoon vanilla extract 2 cups Nestle Toll House Semi-Sweet Chocolate Morsels 1 cup chopped nuts (optional) Step 1 Preheat oven to 375° F. Step 2 Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add pumpkin and mix well. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Step 3 Bake for 9 to 11 minutes or until golden brown. We got the easiest Fall dessert for you! 😉 Pumpkin Dump Cake ❤️ Ingredients 15 oz Libby’s canned pumpkin purée 12 oz Carnation Evaporated Milk 1c packed brown sugar 3 large eggs 2 tsp pumpkin pie spice 15.25 oz yellow cake mix 1c unsalted butter, melted 1c chopped pecans How to: 1. Preheat the oven to 350 degrees. Butter the bottom and the sides of a 9x13-inch baking pan. 2. Combine pumpkin, brown sugar, eggs, pumpkin spice, and Carnation Evaporated milk in a large bowl. Whisk until combined. Alternatively you could dump everything in the buttered pan and mix, but we found mixing in the bowl first helped mix the ingredients more evenly. 3. Pour the mixture into the prepared baking pan. Sprinkle the cake mix over the batter, spreading it around as evenly as possible. Sprinkle the pecans over the top of the cake mix and evenly pour melted butter over the top. 4. Bake for 45 minutes or until the edges are browned and the center is set. A knife inserted in the middle should come out clean. 5. Serve warm with ice cream and caramel sauce. Ingredients 3 cups all-purpose flour or whole wheat flour 2 teaspoons baking soda 2 teaspoons baking powder 2 teaspoons ground cinnamon or pumpkin pie spice 1/2 teaspoon salt 4 large eggs, slightly beaten 2 cups granulated sugar 1 can of Libby's 100% Pure Pumpkin 1 cup vegetable oil 2 cups of Nestle Toll House Semi-Sweet Chocolate Morsels Make It Step 1 Preheat oven to 350° F. Grease thirty-six 2 1/2-inch muffin cups or line with paper bake cups. Step 2 Combine flour, baking soda, baking powder, cinnamon and salt in medium bowl. Combine eggs and sugar in large bowl. Add pumpkin and oil; mix well. Stir in flour until moistened. Stir in morsels. Spoon batter into prepared muffin cups. Step 3 Bake for 20 to 25 minutes or until top springs back when lightly touched. Cool in pans on wire racks for 5 minutes; remove from pans. Step 4 Enjoy
