To me, nothing makes the beginning of summer more than the smell of lilac blooms💜 here are three ways I use lilacs every year: To make lilac syrup, simmer equal parts water and sugar until the sugar has dissolved. add twice the amount of blossoms! this was two cups syrup, four cups of lilacs. simmer for a few minutes along with a couple of blueberries for color, and then leave overnight. strain and voila! the most incredible tasting syrup to use on all the things. my favorite is making iced lilac matcha lattes… DIVINE. The easiest way to use lilacs is to bundle them while still on the stem, wrap in string and hang around your house to try! This was you can use the flowers for tea and medicine all year long. Lilac tea after dinner and before bed too soothe and settle is 💯 (and delicious). You can also make a lilac hydrosol or just infuse in water and dab on burns and small cuts to speed up healing. Lastly, lilac honey. Make sure whatever honey you buy is always local - and always actual honey! A recent investigation of imported honey here in Sweden showed that every single imported honey - 36 out of 36 - was mostly sugar and other sweeteners. Find a local bee keeper and source your honey from them! Pour over lilac blossoms and leave for a few weeks (or forever). You can strain the flowers out… or eat them. Obviously, eat them! I was hoping to make a lilac cordial but the season is almost over so not sure I’ll have the time. What’s your favorite way to use lilacs?
