Real time ruffles with the MVP Tip ✨️ The tip used in every vintage cake, that gives the best ruffles and is the most requested from my reels, the number 70. But this specific 70 tip is extra special... Years ago, when I lived in London, I did some Groupon cake decorating classes just for fun and absolutely loved it. I bought a small set of piping tips from a street market near where we lived in Brixton, and in that set was this #70 leaf tip. The set I have isn't branded, and I have bought a couple of other brands #70 leaf tip since then, but they haven't been exactly the same. I desperately ensure it doesn't get misplaced after each cake. This tip has featured in every vintage cake I've made and I'd be lost without it. The best way I can describe how to use this tip, is to hold the tip up off the cutting board to allow the icing to spill down over itself. You need a constant steady pressure and a slow spin to get an even ruffle all the way around. There are a few points on this string where I've turned the cake too fast or lessened the pressure so the ruffle has flattened out a little in some spots. When it comes to tiered cakes, I always opt for thick layers, and here’s why! Thick layers give my cakes that impressive height and stability, making them stand out visually while also adding extra support for those heavier upper tiers. Plus, thicker layers mean more cake to enjoy in every slice 😜! Choosing thicker layers also helps maintain the cake’s shape during stacking and decorating, reducing the risk of slippage or collapsing. It’s a game-changer when it comes to creating a solid structure, and it allows me to achieve that flawless finish every time.

It’s been a while since I’ve posted a ganaching video! I need to get back in to filming everything again…Life always seems too busy to take the time for making reels at the moment. Anyway, here I am 👋 this was a 6” cake, covered in a 3:1 ratio white chocolate ganache. The first layer was a bit thicker for the crumb coat, the 2 layer I heated up slightly and mixed for a couple of minutes. I use my @profroster to get a flat top and sharp edges.
