Banana Fluffernutter Lava Cake Banana Cake Layers Ingredients * 305 g (2 1/2 cups minus 1 tbsp) cake flour * 10 g (1 tbsp) cornstarch * 1 1/2 tsp baking powder * 3/4 tsp baking soda * 1 tsp fine sea salt * 220 g (1 cup) light brown sugar, packed * 120 g (1/2 cup) granulated sugar * 150 g (3/4 cup) neutral oil * 160 g (2/3 cup) yogurt of choice * 2 tsp vanilla bean paste * 260 g (about 2 medium) very ripe bananas, mashed smooth * 120 g (1/2 cup) milk of choice, room temp * 1 tsp apple cider vinegar Instructions 1. Preheat 350°F. Line 3 pans. 2. Whisk dry. 3. Whisk wet. 4. Combine just until smooth. 5. Divide. 6. Bake 22–25 min. 7. Cool. Marshmallow Lava Filling Ingredients * 400 g marshmallow fluff of choice * 160 g (2/3 cup) heavy cream of choice, warm * 20 g (1 1/2 tbsp) butter of choice, melted * 1/2 tsp fine sea salt * 2 tsp vanilla bean paste Instructions 1. Whisk fluff, salt, vanilla. 2. Stream in warm cream. 3. Whisk in butter. 4. Rest until pourable. Use at room temp. Whipped Peanut Butter Buttercream Ingredients * 226 g (1 cup / 2 sticks) butter of choice, slightly cool * 140 g (1/2 cup) creamy peanut butter * 420 g (3 1/2 cups) powdered sugar, sifted * 1/4 tsp fine sea salt * 1 tsp vanilla bean paste * 120 g (1/2 cup) heavy cream of choice, room temp Instructions 1. Beat butter. 2. Add peanut butter, mix smooth. 3. Add sugar, salt, vanilla, whip. 4. Stream in cream, mix on low until desired consistency. Assembly Instructions 1. Level. 2. Thin buttercream layer. 3. Pipe tall dam. 4. Add lava (center only). 5. Repeat. 6. Top layer, thin coat. #fluffernutter #mallow #bananacake #nondairy #eggfree
