Once you try homemade marshmallows you will never get back to store bought ones! For the Infusion: 4 tbsp marshmallow root 4 cups water Let the mixture infuse overnight, then strain the next day. Marshmallows: 2 ½ tbsp gelatin (or 2 tbsp agar-agar powder or 10 sheets of gelatin) 1 cup marshmallow infusion 1 tbsp vanilla extract 1 cup honey or agave syrup 1 tsp slippery elm powder Optional: 1 tbsp natural color (e.g., beetroot, matcha, pea flower) and 5 drops of edible essential oil Arrowroot powder for dusting Instructions: In a mixing bowl, combine ½ cup of the marshmallow infusion with the gelatin. Let it bloom for 10 minutes. Meanwhile, in a pot, mix the remaining ½ cup of infusion with 1 cup of your chosen sweetener. Bring to a boil and cook on medium-high heat for 9 minutes. In another bowl, mix the slippery elm powder, vanilla extract, and (if using) the natural color powder. Add the bloomed gelatin to this mixture, then pour the hot syrup on top. Combine 4 tbsp of marshmallow root with 4 cups of water 2. Let that mixture sit overnight (next day) 3. ½ cup of mixture into a bowl 4. 2 ½ tbsp gelatin 5. Let those bloom in the bowl while you continue (To a pot) 6. 1 cup of honey 7. Sprinkle of salt 8. Boil for 9 minute on medium high (Time to combine everything) 9. Pour Honey mixture and Gelatin mixture into a bowl 10. ½ tbsp slippery elm powder 11. 1 tbsp vanilla extract (I added about 1 ½ and the taste was very strong of vanilla lol! still good but STRONG! just fyi🩷) 12. Combine ingredients on low 13. Mix on High for 9 minutes once combined (While the mixer is going) 14. Line your choice of pan with parchment paper 15. INGREDIENTS: 2 tbsp of marshmallow root 24g of gelatin 1 cup of water (divided) 1/2 cup of maple syrup 1/4 cup of honey SUBSTITUTES: Agar agar instead of gelatin You can use all maple syrup or all honey depending on preference. PRO TIP: Vanilla and sea salt are a fab addition for taste!! RECIPE: •Mix together marshmallow root and water and let steep for at least 6 hours (overnight works) •Drain the root from the water through a cheese cloth or sieve and get all that goopy goodness out. •Mix the gelatin and 1/2 the marshmallow water together. •On the stove pop the honey, the other half of the marshmallow water and the syrup over medium heat, and wait until it reaches a gorgeous bubbly sticky consistency (240°f or 115°c if you have a thermometer) •Pour into a stand mixer along with your gelatin/root. •Mix and mix on high for 10 minutes until it has reached a gorgeous white fluff. •Transfer to a dish ASAP as it sets very quickly, then leave to set fully (in the fridge is great) •You can roll in some arrow root powder to give the final look, this also helps with them sticking together.
