Baking hot take! My favorite way to soften butter quickly is in the microwave. The trick is to keep the butter along the outside of the turntable and to rotate the butter after every 4 seconds in the microwave. That’s the trick to softening butter in the microwave without melting it... reposition it after every few seconds of heating until it is the desired consistency. I use this method when I’m making cookies, cakes and buttercream since my kitchen tends to be cool. Even when I let butter sit on the counter it is often not soft enough.
