Anglerfish in Norway Finally got to see this cool anglerfish over the weekend🥳, it had been on my list for a long time! The Monkfish - Breiflabb - Lophius piscatorius 🔍 Monkfish are known for their ambush hunting strategy. They lie on the seabed and use a modified spine on their head as a lure to attract smaller fish. Once the prey gets close, the monkfish uses powerful suction to swallow it whole👀. 🐟I was so excited when it started moving the lure, it looked really cool. My buddy actually thought it was a small fish at first, so yeah, it’s a pretty convincing trick! 🤔I started wondering if the monkfish moved the lure because it was annoyed by us or if it was actually trying to hunt us. Okay okay, back it up 🤨 … perfect 😌 I got a bit closer to this anglerfish (monkfish – breiflabb), and it started lifting and opening its mouth, probably wanting to leave quickly, or measure if i can fit in it's mouth 🤔. When I backed up, it lay back down and closed its mouth 😁. This anglerfish was right at the start of a dive, as soon as we descended, he was there at around 10m depth. I took a couple of videos and left him alone in peace, thinking I might grab a few more clips on the way back at the end of the dive, since these guys usually stay in one spot for a long time. “ปีศาจแห่งท้องทะเล” Monk fish หรือ ปลาอังโกะ (Anko Fish) ปลาชนิดนี้หน้าตาอาจจะไม่สวยเลยก็ว่าได้ — หัวโต หนังเหนียว หน้าดุ — แต่เนื้อข้างในกลับนุ่มแน่น รสหวาน และมีกลิ่นสะอาดมาก จนคนฝรั่งเศสเรียกว่า “lotte” และมักยกให้เป็นเหมือน “เนื้อล็อบสเตอร์ของคนธรรมดา” เลยค่ะ ปกติปลา monkfish จะถูก ตัดหัวออกตั้งแต่บนเรือ เพราะหัวใหญ่มาก แถมแล่ยาก เวลามาถึงเรา มักจะได้เฉพาะ ส่วนหาง (tail) ซึ่งเป็นส่วนที่ใช้ปรุงอาหาร ก่อนจะแล่ ต้อง ลอกหนังออกก่อน เพราะหนังมันหนาและเหนียว พอได้เนื้อหางเปลือย ๆ แล้ว ขั้นตอนจะคล้ายปลาใหญ่ทั่วไปค่ะ ใช้มีดบางแล่แยกเนื้อออกจาก กระดูกสันหลังกลาง จะได้เนื้อสองข้างยาว ๆ ที่เรียกว่า tail fillets จากนั้นแค่เล็มพังผืดขาว ๆ ออกให้สะอาด ก็พร้อมนำไปทำเมนูอย่าง monkfish à l’armoricaine หรือจะเอาไปอบกับไวน์ขาวและซอสเนยก็หอมละมุนมาก ปลาชนิดนี้อาจจะดูไม่น่ารักเท่าปลาอื่น แต่ถ้าได้ลองทำ จะเข้าใจเลยว่า ของดีบางอย่างมันไม่ได้อยู่ที่หน้าตา แต่อยู่ที่ความตั้งใจตอนเราปรุงให้ออกมาสมบูรณ์ที่สุดต่างหากค่ะ 💛 Le Cordon Bleu Dusit - Bangkok - Culinary Arts School #intermediatecuisine @lecordonbleudusit #monkfish
