Juicy & Moist Mutton Seekh Kebab ✨ 🔸500gms minced meat (atleast 10% fat) 🔸2 medium onion finely chopped 🔸1/2 cup finely chopped coriander leaves 🔸1/2 cup finely chopped mint leaves 🔸1 tbsp finely chopped garlic 🔸1 tbsp finely chopped ginger 🔸1/2 tbsp finely chopped green chillies 🔸1/4 cup roasted gram flour 🔸1 egg 🔸1/2 tsp baking soda 🔸1 tsp chilli flakes 🔸1 tsp coriander powder 🔸1/2 tsp roasted cumin seed powder 🔸1/2 tsp garam masala powder 🔸Salt - to taste 🔸1-2 tbsp ghee/ butter 🔸1 tbsp ginger garlic paste Combine all of the above ingredients & smoke the mixture for added flavour. After it has been smoked, let it chill in the refrigerator for atleast 30mins. Shape them into kebabs by dipping your hands in ice cold water. Shallow fry on low medium flame until its done, optionally it can also be airfried or grilled on charcoal. Super Juicy Tender Seekh Kabab 🔥👌 ● Ingredients Beef / mutton keema 1kg ( 80% meat 20% fat ) Onion 250-300g ( finely grated and squeezed through a cloth remove all liquid ) Ginger garlic paste 1 tbs Green chili paste 1 tbs Salt 1 tsp or to taste Red chili powder 1 tbs Termuric 1/2 tsp Black peper 1 tsp Coriander powder 2 tbs roasted Whole spice ppwder 1 tbs Cittic acid 1/4 tsp Clarified butter ( ghee ) 2 tbs Papaya paste 1 tbs ( optional for extra tenderness ) Instructions: • Grill: Cook over medium-hot charcoal for 8-10 minutes and rotating frequently. • Pan-Fry: If you don't have a grill, slide them off the skewers and shallow fry in a pan until golden brown on all sides. • Bake: Bake at 200°C (400°F) for 15–20 minutes. Tips: • The 20% Rule: Use mince with at least 15–20% fat content. Lean meat is the most common reason for kababs breaking or drying out. • "Resha" (Stickiness): Knead the mince vigorously for 10–15 minutes by hand. Grill the skewers on an open flame (this step is completely optional, my skewers didn't fit in the pan, hence lightly grilled them first & then removed the kebabs from the skewers) Grease a pan with a little bit of oil & fry the kebabs until cooked through. Optionally it can also be airfried or grilled on charcoal. Smoke the kebabs for that added char grilled flavour & garnish with some melted butter. To achieve the street-style fragrance and taste, it is essential to cook them on a charcoal BBQ. I prepared this BBQ all by myself, from lighting up the grill to making and cooking the seekh kababs. Normally, there are always family members helping with the BBQ, but I thought, ‘Why can’t I do it all by myself?’ Trust me, the feeling from start to finish was exceptional. Give it a try and enjoy the flavours! A short history! My Father in Law used to make the best Kababs and I leant this recipe from him .He used to have a restaurant in London with famous Seekh Kababs. Here’s what you’ll need: * 1 kg Lamb Mince * 2 tbsp Red Chilli Powder * 3 tsp Red Crushed Chillies * 2 tbsp Coriander Powder * 2 tbsp Jeera Powder * 1/2 tsp Clove Powder * 2 tbsp Plain Flour * 3 Onions * 1 inch Ginger * 6 Garlic Cloves * 8 medium Green Chillies * 2 cups Coriander * Instructions: 1. In a chopper, chop ginger, garlic, and green chillies. Then add onions and pulse for a few seconds, leaving them chunky. 2. Drain any excess water from the onions using your hands or a cloth. 3. Add all the spices to the lamb along with the onion mixture and coriander. Mix well and let it sit for min an hour. 4. Light the charcoal and once evenly heated, start making the kababs. 5. You can grill them in oven or air fry or cook them in pan. 6. Take a ball-sized portion of meat and roll it with your hands onto skewers, twisting gently to prevent burning.cook until they are lightly golden and done Note: You can also use beef, chicken or lamb to make these seekh Kababs
