💥MUTTON KUNNA💥 ▪️INGREDIENTS: 🌱1 kg Mutton (shanks & mix cut) 🌱Half cup Oil 🌱Half cup ghee 🌱2 Medium Onions chopped 🌱1 tablespoons Ginger garlic( freshly crushed for a better flavour) 🌱1 tsp Kashmiri red Chili 🌱1 tsp Red chili 🌱1/4 tsp Turmeric 🌱1 tspCoriander Powder 🌱1 tsp Cumin 🌱1 Salt 🌱4 tbsp Yogurt -Special Masala: 🌱half tsp Cumin 🌱1 tsp Garam masala 🌱3-4 Cardamom 🌱1 small Star anise( badian) 🌱Small piece of Jaifal & javetri Crush all these spices together and its ready. METHOD : In a pot/instant pot add oil, ghee , mutton, saute for 6-7 minutes until color changes, add onion and all the mentioned spices( except special masala) pressure cook for 30 minutes. Uncover and let the water dry out for 10 minutes at medium heat. Add yogurt, and special masala at the end. Cook for another 10-12 minutes until oil separates. Garnish with ginger and some crushed cumin. Slow-cooked until melt-in-your-mouth perfection, pure comfort food. ⭐ Ingredients Beef: 4 beef shanks (bone-in) Salt & black pepper (to taste) 2 tbsp olive oil Aromatics: 1 large onion, finely diced 4 cloves garlic, minced 2 tbsp tomato paste 2 cups beef broth 1 cup crushed tomatoes (or tomato sauce) 1 cup carrots & potatoes (optional, for more richness) 1 tsp paprika 1 tsp dried thyme 1 tsp dried rosemary 1 bay leaf 1 tsp Worcestershire sauce (optional but adds depth) Finish Fresh parsley or thyme for garnish 🕒 Cook Time Prep Time: 15 minutes Cook Time: 2½ – 3 hours Total Time: 3 hours 15 minutes Instructions: 1. Sear the Beef Pat beef shanks dry and season generously with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear shanks on all sides until browned (about 3–4 minutes per side). Remove and set aside. 2. Build the Flavor In the same pot, add diced onion and cook until softened. Add garlic and cook for 30 seconds. Stir in tomato paste and let it cook for 1 minute to deepen the flavor. 3. Add Liquids & Herbs Pour in beef broth and crushed tomatoes. Add paprika, thyme, rosemary, bay leaf, Worcestershire sauce, salt, and pepper. Stir well and return the beef shanks back into the pot. 4. Slow-Braise Reduce heat to low, cover with a lid, and simmer for 2½ to 3 hours, or until beef is extremely tender and falling off the bone. Stir occasionally and add a little broth if the sauce gets too thick. 5. Finish & Serve Remove bay leaf. Taste the sauce and adjust seasoning. Garnish with fresh parsley or thyme. Serve with mashed potatoes, rice, or crusty bread. 💡 Pro Tip For an extra silky sauce, remove the shanks at the end, blend ½ cup of the gravy and vegetables, then stir it back in. It makes the sauce rich and restaurant-quality.

Ambani Wedding Mutton: Ingredients & Recipe Below:- - Marinate 1 kg mutton with 1 tbsp each of salt, red chilli powder, half tbsp each of turmeric, fennel powder, amchur powder, 2 tbsp ginger-garlic paste and 200 grams curd. Let it sit for half an hour at least. - Blend together 5-6 onions, handful of coriander stems, 2 strings of curry leaves, 15 garlic cloves, 2 inch ginger, 1 tsp each of black peppercorns, cumin seeds, 1 tbsp coriander seeds, 4-6 green chillies, 2.5 inch cinnamon, 4 cloves, 3 green & 2 black cardamom and 1 mace into a fine paste. - Heat 6 tbsp mustard oil in a Kadhai and add in the paste prepared above. Fry on medium high for 7-8 minutes then add in the marinated mutton. Fry on high for 8 minutes then on medium for 12 minutes. Now add in 4 cups of hot water mixing well and close the lid turning flame to low for an hour or so checking and stirring in between. - Place 2 walnuts on medium flame through a wire rack and let them char evenly from all sides. Immediately put the flaming walnuts in cold water and then grind them into a fine paste adding a bit of the same water. Strain this paste through a strainer and collect the charred ink.
