For OCs I still do the same thing. As you make drawings of them, add it to the reference pile. Circle and cross out things that do and don't work, take notes. Create expression sheets, and turnarounds. Use grids to draw them in turnaround poses to get consistent proportions. And take note of where features sit when drawing new poses. If they're inspired by anything or anyone, have a section for that as well.
